It all boils down to client preference. If most clients prefer grey then you honor clients wishes. You can try to suggest other colors but if that's what they want....then give them what they want. At the end of the day it's their space. That's my take
Yes, if the client wants just neutral pallets you have to do. But sometimes it could be mix match of culture inclusiveness. A pop of color here and there is cool but sometimes people just go for the basic.
I really like grey, black and white as basic colours cause you can play with any other colour for decor. I change up my colour scheme with throw pillows, blankets and artwork on the walls and a grey couch and curtains are perfect for whatever pop of colour I choose. I feel like a coloured couch wouldn't give me that freedom. I get how it can feel monotonous for you but imagine you are entitled to decorate your home however you wish. Should've told the person doing your house exactly what you wanted.
