what controls the switching speed of the 3 phase output? I presume the switching frequency determines the speed of the AC motor?

No, the switching frequency does not control the speed of the motor. The controller does. Normally the switching frequency is constant, e.g. 10 kHz or 20 kHz. Google for PWM control or space vector modulation.

I think they are just providing DC power from whatever the 3 phase AC is doing, not controlling a motor.
