Big Cam Cummins was the very best poor man's engine! I drove mine over a million miles with only one inframe! That ole' Pete reminds me of my old girl! 75 and still alive, lol! Love trucks, they were my way of life for years!( Still got my '88!)
I have a 1974 Peterbilt 359-A with a Big Cam 400 with 13 speed trans, and it starts up no problem, my truck don't smoke after pouring two bottles of sea foam in my fuel tanks and filter.
@Sneighke also the water vapor dissipates quickly in the air while the white raw oil smoke tends to be thicker and heavier. It is probably a mixture of both that varies with how cold the air is and the motor and everything about it. Also, that cold clatter (which I also love) tells me it's struggling to light off the fuel.
supertrucker; Try the Banks power-pack, fuel injection performance kit, and the K&N force-feed air intake. Those should help, if not, try a new high-pressure turbo.
I can tell from that comment your not an actual mechanic and have never worked on anything. 3406 Cat and C15 are the most popular engines for over the road trucks. Never replaced a big cam from being grounded all the way out? or a P pump, Ran overhead on a ISX, or replaced common rail on them have you? Unless you actually work on these engines every day you should keep your mouth shut and not say something so damn stupid.

855 cummins is .28mm on intake and .58mm on exhaust, injector torque down is 6 inch pounds. all cold. But thats not the point, if they were real mechanics they would know no matter what brand everything breaks down. Series 60 is a great engine best in class fuel economy and very reliable, but they do have problems like any engine out there. Notorious for grinding lobes off of cams and will eat the counterbore out unless you watch the coolant like a hawk for additives. I love Detroit the old 2 strokes are my favorite engines built, I honestly like just about all brands. I ran overhead on A ISX cummins the other day 99 model no egr, fixed geometry turbo, 600 horse bad ass engine. It just pisses me off when key board mechanics pretend like they actually know something about diesel engines.
I have personally owned Cummins small and big cams and m11s and a bunch of n14 blacktops and redtops and a couple isx's and I have had 3406 a,b and e models and even a c12 and I have had 671 and 8v71na's and 8v71T's and series 60 12.7s and Detroit's are shorter lived motors with less power no matter what model with my experience. By far I had better luck with very few to NO breakdowns with small and big cam Cummins than any of them and it is nothing to get 1.5 million miles out of them without rebuilding them if you keep up the maintenance and run the overhead every year or 100,000 miles. But my Cats were pretty reliable and had good power too.
For one its not the cam; big cam 2,3,4 etc just represents its cooling capability. That knocking sound you hear is because the truck engine is idling at a low rpm because it is still turning over.
big cam represents the cam journal size. small cam cummins were notorious with eating cams. cummins came out with the big cam. Has nothing to do with cam profile. bc 2,3,4 were nothing more than updated revisions of the block.

the best 2 road engines are the N14 and Series60. Cat is notorious with breaking down, dropping valves, injector problems and oh yea the yellow tax.
not to mention broken bolts there isn't a bolt thats safe from breaking on that motor

Cummins NTC motors commonly smoke until they warm up.
Injector knock at low rpm warmup is normal, you here it go away when accelerated, raw fuel knock, totally normal on cold starts!
