The potato would have to be the rootstock, but it dies off quickly compared to the other three. They are all related, so the grafting part should work. I don't think it's worth the effort however.

Tomato and egg plant belong to the nightshade species. They can be grafted. Pepper belongs to the capsicum family so I have my doubts about this graft.
that is incorrect. Nightshade is the family, in which all three species are members. Capsicum is the genus of peppers, which is a member of the nightshade family. Family > Genus > Species.
You really should not remove so many leaves from the plant. Anyway why did you do it in the last? But your videos ARE REALLY USEFUL! I'm expecting more videos from you....
Removing the leaves, causes the plant to go into producing hormones that cause it to bush out again producing foliage. It's not necessary, but absolutely helps the plant recover from the graft, and integrate. :)

The purpose of grafting is scientific, and can be applied in practice to increase yield
novelty purposes i suppose..
Saving space is the main benefit of grafting 3 plants onto 1 plant (the rootstock).
