The mono/stereo thing it's actually really helpful. It's not just making your sound wider or not, but it's about putting your sound in the right place and making space for the rest of the sounds. We need more things about that "technical" stuff. We can't learn creativity. That's something that depends on each one... But we can learn these knowledges so we can improve our music.

When your sample is stereo, it is two channels, L and R. When you use Utility in L or R mode, it takes only the left or right channel, but plays it on both channels, eg both speakers. That prevents loss of information due to phase cancellation when summing both (perhaps slightly different) channels to 1 and then sending them to both speakers. Your basically using two copies of either left or right channel, so they are identical. Helped?
Yes, but mostly with sampled, organic drums. They tend to have slight differences in phase because of the recording proces. Drumsamples that contain stereo effects or reverbs can also develop phase differences between channels.
