To create HUF, at least two co-parceners are required either son or daughter. Therefore only husband and wife cannot create an HUF. So, HUF in this case cant be created.
For HUF, to take rebate under sec 80C, following options are available 1.ELSS -Equity linked savings scheme 2.Life insurance policies 3.Tax Saving FDs in banks
Pls note that Gift from other than Member is not taxable only upto 50k , otherwise Full gift amount is taxable, in Ur post , it is stated 5L , which is incorrect. Sec 87A , is not Applicable in case of HUF , So Basic Limit is 2.50L , on which Tax is not Applicable, otherwise it will be Taxable.

Sale deed is not Registered in the name ofHUF and hence it is registered in the name of Karta. Please advise it is in order and guide me

Ii think HUF is formed only after first child is born and not after one gets married as mentioned by you.

What are the documents heeded?
Pan card for HUF is required and after that huf bank account.
Kyc Documents for karta like address proof, photograph and I'd proof will be required
