    Hello, This is Sugar Bean♥
    I made creme brulee macarons today.
    Also, this video includes a filling recipe!
    (Vanilla flavor and caramel sauce)
    You can find a lot of methods to make caramel sauce on TH-cam and it doesn't matter if you skip.
    (You can make only vanilla cream because the shell was caramelized. )
    This is the most popular menu in my store.
    So, I want you to enjoy and try it! Thanks💕
    (You can use more small batch than my
    all ingredients - same ratio, and you don't
    have to peel many eggs like me 😉😉)
    ●ingredients●
    (about 20-25 pairs, 약 25쌍)
    [Shells]
    egg white 160g 달걀 흰자
    sugar 150g 설탕
    almond flour 190g 아몬드파우더
    sugar powder 170g 슈가파우더
    [Filling]
    yolk 120g 달걀 노른자
    unsalted butter 450g 무염버터
    sugar 110g 설탕
    water 30g 물
    vanilla bean 1 or paste 1T
    바닐라빈 또는 페이스트
    [Caramel Sauce]
    water 20g 물
    sugar 100g 설탕
    whipped cream 70g 생크림

    ■■■ ■■■ ■■■ FAQ■■■ ■■■ ■■■
    1. What is oven shower..??
    - The oven-shower is to wait 2-3 minutes without removing the tray in the oven after baking. (with open the oven door)
    2. How to dry in the oven..?? (high temp.)
    - 1st preheating - turn off - put the tray in to the oven (at this time the temperature drops to 90-100℃) - 2nd preheating - start to dry, until the temperature reaches 120℃ again (with open the oven door) - close the door and bake - oven shower
    Look at the subtitles in the videos, there is detailed temperature.
    3. What is the baking mat's name..??
    - This called a teflon sheet.
    4. How long do you whisk meringue or do macaronage with mixer..??
    - It's not important how long I did.
    Because we have different machines and environment..!
    You should check the cocsistency of meringue or mixture frequently.
    5. What kind of colors do you use?
    - Chefmaster liquid colors
    You can get it on 'Amazon.com'
    6. Please English subtitle

    - My ovens are UNOX 135 and convection type.

    - I made all templetes myself and I am not

    10. Do you left or bake immediately..?
    - As I already explained, I do not leave it because I am drying in the oven at high temperatures for 2-3min.
    It is a very useful and convenient tip to reduce the time required.
    Also you can get shiny and smooth shells.

      I store my macarons in the freezer after cold storage in the fridge for 1 day (with sealed) 🙂🙂💜 It can melted easily in room temp.

    I tried to do the macaronage in the stand mixer & it completely messed up my batch, they came out hollow & the feet didnt raise they looked more like oatmeal cookies just missing the oatmeal guess I'll have to try it using this specific recipe instead.     After breaking all those eggs have you ever had a yolks break as you were separating the yolks from the whites? And if so what do you do?

    Your macarons looks soooooo perfect and pretty!
    I tried to make macarons lots of time but so not easy to make non-hollow shells. Would you mind telling me which almond flour you are using? Do you grind it finely before you use or do you use 100% almond flour or mixed one? I would really appreciate your professional opinion!

      The baking trays I believe comes with the oven already. Check Unox ovens. 😊 For the storage boxes I think it came from Lock & Lock. 😅

      All the problems are almost due to meringue. Make perfect meringue slowly,, more stronger than you made..😉

    Hi, i LOVE your recipes! I wanted to ask if i can reduce the amount of butter in the filling? And can you recommend other fillings with less butter instead of buttercream/ganache fillings?

      I hate buttercreams myself. They taste greasy and melt at room temperature. I use cream cheese and white chocolate as the base for my ganaches.

    hi i do your recipe but half portion. it perfect but when i used dry oven. i heat the oven convection at 120*c / 248*f .i turn of and i put my tray for 3 mins. then i turn on to 248*f/120*c
    when the degrees come. i close the door and i put 293*. but the macs they crack and coming like volcano.
    i tried to put 265* the macarons make a hollow. i try 275* but the color change to little brown.
    what can i do. ?

    I admire your confidence and your meticulous methodology. I have watched over 30 macaron TH-cam videos and tried about 5 - 6 recipes. Unlike other videos, you show all of your shells not just a select few best ones. I have decided to follow your method. What size mesh (how fine) do you sift your almond flour and powder sugar? I bought a 30-mesh. Yours look much coarser but the surface of your macarons look very smooth. It looks like you start with speed setting 5 mid-low, increase to 6 mid, then 8 mid-high, and then gradually lower the speed setting until it stops. Can you tell me what to look for when you change these speed settings? Also after you add almond flour and powder sugar, you kept the speed setting for the entire macaronage process at 2. What do you look for in the consistency of the batter to stop the macaronage process? Thank you very much in advance. I will report back once I receive all my orders and try your recipe. I hope you can answer my questions so that I will not be trying blindly.

      So, where's your report? Success? I doubt her sieve has a mesh rating and, as you suspect, it's very coarse. As a result, I don't think the smoothness and shininess of her macs have anything to do with the sifting. I looked for the same sifter as I was getting very tired of spending so much time sifting with fine sifters. I couldn't find hers with the handle, but think this one is otherwise the same:

      It stops clumps and really coarse junk. Otherwise, as you saw, the flour goes through quickly. As for what to look for with the meringue and batter, about all we have to go on are the videos. I've got the meringue down - very stiff. I'm still trying to perfect the batter as I also get lumpy and dull shells. But I also get full shells with no gaps and excellent feet. Her recipe works and works well, but I don't like her fillings at all. I've tried a couple and they just taste greasy to me. I've decided I don't like buttercream fillings and now make ganache fillings.
