What I personally do is: I'll visit my two favorite shops www.parkinfabrics.co.uk/ and www.petershams.com/collections/sinamay-fabric, find what I like and then start drawing down ideas from what I bought :) With size i would say start with making things that fits your head :)

Sinamay is a stiffened frabic with a large weave used in hat making any good millinery website will have it or even ebay.
