I feel carrot messes with the taste. Sugar is in literally everything including carrots (why they're bad for rabbits actually because they're high in sugar) and as long as you don't overdo it you'll never taste it or alter the taste.
That’s how ya do it ! Because I stew meatballs a long while, a little beef stock goes in with one large cut carrot (remove at end) to the keep the sauce from becoming acidic and thick.
Excellent technique (I grew up Italian.) Veal, pork, and beef, fresh crumbs, no sugar in the sauce...all good, BUT NO WHITE WINE WITH RED SAUCE AND MEATBALLS!!!!!!!! Super Tuscan, Montpuliciano, Barbera, etc.
