I am a teacher in a high school in Thailand and there's a coconut ice cream vender in front of the school. So my secret for you is if you miss those childhood food Khun Pailin, just go to the school nearby. You will see lots of the childhood food such as สายไหม or โตเกียว.
I think many of her recipes are for people who live outside of Thailand and don't have ready access to Thai food- particularly Thai street food. If we lived there, we wouldn't need to make it ourselves :D.

Ice cream with bread is the BEST. I’ve never had it with coconut ice cream though, here in Singapore and Malaysia I always ask for the corn ice cream from the ice cream uncle !

Yeah! Some calls that dirty ice cream here in the Philippines. But we do luv luv luv it! Just the same, though fewer now and you cant see always on the streets, you can buy it either on sugar cone or when youre hungry, in a fluffy bun! So good! Takes me back to my childhood!

In Indonesia we call it es putar, literally mean spinned ice because it's require same spinning method to ice cream during production. Other name is Es Dung Dung because it's sound that the sellers make to attract buyers.

Definitely finding a good coconut milk making a huge huge giant difference one the result. One of Chinese dessert I make I tried at least 10 different coconut milk until I found the right one. I have to say all of them taste different even though I used the same ingredients and same formula.
Nothing compares with freshly made coconut milk at home and then make the best ice cream at home you have ever had. Please try it from scratch with th elong time consuming one.
Put it in a pre-chilled glass dish, freeze for 20 minutes, whip it up, freeze again for 20-30 minutes, whip it up again, and once you've reached the desired constency just freeze it until ready to serve.

Try freeze the concoction in ice cube tray. Pop as many as you like, add a spoonful of coconut milk, blend it in blender or food processor
