Hey Stephen! I’m delighted to hear you made and loved them…so easy, right? I’ve found that we also enjoy them with a sprinkle of mini chocolate chips on top, if I don’t feel like melting chocolate chips for the drizzle. It’s even easier and adds another nice crunchy texture. Since these make ahead and travel so well, do you have an event coming up soon where you can make and share these? - Deb

Welcome back, Chris. As I mentioned, these travel really well, too. I’ve made them for work twice when I made and served lunch for the entire team for Admin Professionals’ Day. They were a HUGE hit!!! As long as you keep the shells at room temperature and the “fluff” chilled until you’re ready to serve, you truly can make them days ahead of time and still have a crunchy light dessert you’d be proud to serve. It’s also a great recipe to make with kids. Penny and I made this together when she was 4. She was able to shake the cinnamon and sugar on and help to cut the tortillas with the pizza cutter. While they baked, she whipped up the fluff and then filled the cups (with a little help). 😉 Do you ever cook with Parker and Isabella? - Deb

@@DebsKitchen hi Deb! I do not get to bake with Isabella and Parker. That is something on our summer bucket list. I am so happy to know you and Penny have a chance to cook together. That is such a gift you are giving your sweet granddaughter. Be well my friend.

Unfortunately, I haven’t had the opportunity to be with my sweet Penny for 3 years with her in DC and us in CA. I’m hoping another year might remedy that. I hope you’ll get the chance to bake with your girls this summer. - Deb

Hey Kev!!! Welcome back! I hope you’ll give these a try. They are SO yummy, yet SO easy. I’ve also made them with vanilla pudding and they were equally yummy. You can also sprinkle mini chocolate chips on the top if you don’t want to mess with the drizzle. This method is still visually appealing and adds another texture which is also really nice. I’m thinking adding just a little bit of instant coffee dissolved in a tiny bit of water and added to the pudding mix would make for a really nice coffee flavor that would play well with the cinnamon and chocolate. I’ve made these with young kids and they love to help! Do you have an idea of when you’d like to make these? I love the ability to make them ahead, too. - Deb

Poor oops cup, lol. I’m gonna try to do a low carb version of this. I really liked these cinnamon tortillas when I was a kid. So, now I know the secret. Thanks.

Welcome back, MJ! My mom used to make cinnamon “cookies” with leftover pie dough when I was a kid and I loved them. This is even better because they are SO crispy and light. Try to find the thinnest tortillas you can or at least try to avoid the “super soft” ones. The thicker they are, the less crisp they will be after baking. I’ve never used low carb flour tortillas, so I’m anxious to hear how yours turn out. I also typically use sugar free pudding along with my light cream cheese and light whipped topping, but the store didn’t have the sugar free pudding the day I went shopping. Either way, they are delicious!! Please report back on how this goes for you. - Deb
