Yes, the SHINee members all have official colors: Onew is represented by green, Jonghyun's official color is red, Key's color is pink, Minho's color is blue and Taemin's official color is yellow. However, those outfits didn't necessarily correspond with their official colors.
However, SHINee are one of the first groups to start the trend of colored skinny jeans and form-fitting outfits that showed off their athletic psychics for male idols. Before SHINee, the trend was hip-hop style with baggy clothing that was 3 times too big. Their fashion trends have been given the name "SHINee Trend." They are known for their " boyfriend, school boy fashion/student look" and everyone started wearing colored skinny jeans around 2008/2009 because of SHINee. They are even trendsetters when it comes to fashion. Never following trends, but always creating them in everything they do. :D It is safe to say that the original trend of colored skinny jeans in the west was probably a transplant from the trend that SHINee started. A lot of foreign idols over the years have told SHINee that the fashion trends they started in Korea were adopted by them in the U.S., Canada, China, Thailand, etc. That's how influential SHINee are.
Now you need to check out some Super Junior concerts, because they are the originators of water fights and crazy stuff like this. SuJu is probably the ones who taught SHINee how to be this chaotic. LOL And EXO learned it all from both of them. It's kind of an SM thing, at the end of the concert they use up all your extra water by dumping it on each other.
You have to consider that they have been singing live and performing nonstop for more than 3 hours straight, so by the end of the concert they are all hot and tired, and what better way to cool down, than starting a water fight. Plus, fans love to see them acting crazy.
Also, one reason why SHINee doesn't slip more often or worry about their mics getting wet is because they have performed so often at outdoor concerts in the middle of rainstorms where it downpours that they have become experts at how to pull off singing and performing when the stage is completely drenched. They can perform just as good in the middle of a monsoon as they do at any other concert or performance. SHINee are actually known for attracting the rain whenever they perform outside. You should check out some compilation videos of SHINee and other Kpop artists performing in the rain.
Yes, just listen to how stable and on point their vocals are even while their minds are clearly on other things. This is what makes SHINee one of the best vocal groups out there. Even while sobbing or running around the stage chasing each other, they can still continue to singing live and sound even better than any recording.
And nope, Onew wasn't in the military. Onew, Key and Minho all enlisted in the military in 2018/2019 so that concert was long before their military enlistment and they didn't hold any concerts when the members were in the military. There have only been a select few concerts where you won't see all 5 or 4 members at the concert. Judging by their hair styles and outfits, that concert where you asked about Onew was probably during their SHINee World Concert III tour in 2014. This was the year when Onew had vocal cord surgery and spent several months unable to speak, so there are a few concerts where he wasn't present, that could have been one of them. However, he he did participate in most of the tour, so my guess is he was there, you just didn't see him in that clip. He returned for their SHINee World Concert 2014 in Japan, where one of his most legendary performance of "Rainy Blue" took place as an official comeback song after his surgery.
The concert where they are all wearing the colored T-shirts and pants that match was from their first SHINee World concert tour in 2011 and the the one where they are all wearing the green T-shirts I think is during their SHINee World Concert II (SWC2) tour, so this would have been around 2012, so yep no lightsticks. SHINee didn't get their official diamond shaped lightstick until 2018. Before that, almost every concert tour had its own lightstick design that was specific to that concert.

I love Shinee. One of my first Kpop groups I got into in 2008 and actually I got into them when they debut, so I watched them grow up. Also my first reaction of them not in an mv was on a Taiwanese show called 100 % Entertainment. Which is how I discovered a lot of Kpop groups especially Super Junior and Shinee.
