I am Saudi. You made a mistake by going directly to the store to buy fish. As a local, I do not do that because they give double prices. My advice is to go to the stores that sell fresh, raw fresh fish, which are located next to the sea. Then take the raw fish and go to a store that will cook your fish for you. It will be much cheaper than what you did. Other than that, this is an Egyptian restaurant, not a Saudi one. They cooked your fish in the Egyptian way, not the Saudi way. But bon appetit.

The standard recipe starts with main ingredient which is caramelised onions , you spill 4 tablespoons of olive oil in the pot with the onions until the colour shifts to dark brown then you add your chopped tomatoes and tomato paste it sits for 5 minutes then you can add your spices like Black lemon, mixed Arabic spices salt and black pepper right after it add your boiling water to let everything kinda fuse to each other Finally add your rice “ preferably Egyptian rice” with the water covering approximately 1cm above the rice. Wait for it until the rice absorbs all the water then tadaa 😊 Enjoy 🎉.
