I get it! I'm Black and Mexican, but what little bit of Irish I have in me comes out when I'm cooking with potatoes! When I fry potatoes and onions, I like to wait till the potatoes are half done before I throw the onions in it then throw the rest of the seasoning on top the onions before I turn it the second time! When it comes to potato salad...I put 1/3 more of celery in it than onions and 1/2 less of bell pepper than onions. So when you bite into that crunch...you thinkin is this onion or celery? It's so well blended....fire! I prefer green onions when it comes to potato salad, but yellow or even white onions will do it too! In that order! Don't get me started on sweet potatoes/yams and sweet potato pie...OMG!
