Brandy comes from Distillation of fermented Grape juice and matured in Oak cask.
Brandy gets colour and additional aroma and flavour from the Oak cask barrels.
Other fruit brandies are made from apples, peaches,strawberries and raspberries

The word Brandy comes from the Dutch word Brandewijin.
Brandewijin means Burnt Wine.
In 16th century Dutch traders introduce to French and Spanish people.

The Origin of Brandy
The origin of Brandy can be traced back to the expanding Moslem Mediterranean states in 7th and 8th centuries.
Arab alchemists experimented with distilling grapes and other fruits in order to make medicinal spirits.
This knowledge and techniques soon spread beyond the border of Islam.
Slowly it travels to Spain Ireland and france where the monks start to use Brandy as a medicine in 8th century.
Cognac
Cognac comes from the charentes district of france.
The climate is Maritime and the best soil is chalk.
Fine champagne is the name of cognac blended from petite and Grande champagne regions in cognac.

The wine from cognac is distilled twice in pot still.
The young brandy is put into oak cask and when matured it is blended.
Classification of Cognac
1. V S / V S P which means brandy must be matured in oak cask for minimum of 2 years and Maximum 6 years
2. V S O P which means brandy must be matured in oak cask for minimum of 4 years and maximum 15 years
3. X O which means brandy must be matured in oak cask for minimum of 6 years and maximum 20 years
V stands for Very
S stands for Superior
O stands for Old
P Stands for pale
X stands for Extra

How to serve Brandy Proper way ?
The finest, oldest brandies should not be mixed.
Young brandies mix reasonably well with soda.
In east part of France, Brandy is mixed with plenty of iced water and consumed in theirs denatured form with food.
How to serve Cognac professional way?
Fine cognac should be drunk just as it comes(Neat), without mixer or Ice.
It is Traditionally served in brandy ballon glasses that allow room for swirling.
Brandies also encouraged by gentle warming of the glass in hand.
The aromas are better Appreciated by warming the glass.
