Bertus Cooks - Disgusting Garlic Bread

  • INGREDIENTS:
    1 Sourdough loaf
    Softened Butter - 210g
    Chopped shallot - 70g
    Crushed garlic - 20g
    Chopped parsley - 15g
    Chopped spring onion tops - 30g
    Grated Parmesan - 65g
    Lemon zest - 1/2 lemon
    Sliced Mozarella - 220g
    Olive oil - splash
    INSTRUCTIONS:
    1. Mix together butter, shallots, garlic, parsley, spring onion, zest and parmesan, reserving 1/3rd of parmesan for later use.
    2. Slice bread most of the way through lengthways and across the width of the loaf.
    3. Spread butter mixture generously between all ‘square’ slices of bread.
    4.Then stuff sliced mozzarella between the bread slices.
    5. Finish with the remaining parmesan and a generous splash of olive oil.
    6. Place bread in cast iron potjie pot and cover. Place over low coals, placing some coals on top of the lid for ~ 20-30 mins.
    7. Remove when golden in colour and cheese gratinated.
