    I have 6 dozen eggs in my freeze dryer right now. I have 14 hens right now but my neighbor had 6 dozen that had accumulated at this house last week and they don’t have a freeze dryer. He offered me the eggs and I agreed to take them if he would let me share back 50% of them so that they will have some freeze dried eggs on their shelf. It’s a win/win for both of us!

    Whwn we had ducks I always used the eggs for baking. They were "richer" than our chicken eggs and were perfect for baking.

    I couldn't understand why my chickens just weren't laying very much considering it's the time of year there is supposed to be an abundance. I let out my hens a bit late this morning and one took off around the house. I followed her and found a treasure! 31 eggs they've been hiding from me under the porch! And now this video is very useful!!

    One of my favorite ways to preserve eggs is quiche. They freeze beautifully and you can make them in any size pan, with or without a crust. Grease the pan well or line it with parchment paper and pop it out after it's frozen so all of your pans aren't stuck in the freezer. You can also fully cook, partially or no cooking and just freeze it. Put it back in the original pan to thaw and cook or heat accordingly. Thanks for sharing your ideas!

    You can easily clean the lime scale from the jars by adding 1/2 cup vinegar to the jar. Swirl it over the crusted line, then fill the jar with boiling water and let it sit for 30 minutes. It’ll come off easily. Hope you try it. ❤😊

    Couldn't believe how many eggs you all eat in just the winter. So I decided to do the math 9 weeks x 80 dozen = 106 eggs a week, which is 11 eggs per person. That's a lot of eggs, thank goodness you keep your own chicken. I Love watching your channel. You have gorgeous children. Mine are now 26yrs, 27yrs & 29yrs old. Time goes by too fast and if I could go back 30yrs I would do so in a heartbeat. My 3 boys are wonderful, thoughtful men and my eldest is becoming a daddy in October and I can't wait ❤♥️♥️♥️♥️♥️♥️♥️♥️♥️

    Leftover night typically becomes Breakfast Casserole night here too. I love topping mine with salsa.
    I ordered a gallon pickle jar with my grocery order but, the jar was plastic and not glass. A little disappointed but, serves me right for not walking in and doing my own shopping. Hopefully it doesn't become the industry norm. Glass jars of any variety are proving to be useful and valuable resources.

      The best place to find affordable glass half and whole gallon jars is Azure Standard. You have to order the lids separately, but it's not very expensive and they come in packs of six. I try to get extra jars every three or four months because I always find a use for them! Love storing stuff in glass gallons and I put a lot of my spices in the half gallons...since it fits about a pound of most spices (which I also get from Azure).

    Thanks for all the effort you put into this video! Steaming eggs, even day old, for 20 minutes was a game changer for me. Just drop in ice water to cool and peel away!

    What is the time and temp for baking the 1st recipe you did? I’m going to try this as is in the video but also a savory version by omitting vanilla and adding ham and spinach before baking… we’ll see how it goes!

    I'm with your kids about not liking the taste of duck (or goose) eggs.
    Grew up on subsistence type farm and eggs were one of the ways we made some money. In the winter especially when chicken egg production was low there were many times the only eggs left for us were duck, goose or guinea. Even though very small, guinea eggs were much more popular.
    Since us kids made our own breakfasts and lunches from a young age we learned many easy meals. One popular way to use those nasty eggs was to scramble up a bunch of those eggs tossing in a small amount of dried parsley and thyme as well as a little milk or water(to counter the rubbery texture of the eggs if cooked at too high temp. We kids weren't chef Ramsey so we frequently missed getting the right temp). We would put them on thick slices of homemade buttered toast and then slice surplus cheese and put in oven under the oven broiler until bubbly. The spices helped mask that high protein taste
    Us kids would barter meals; if I make you breakfast you will do X for me. This was one of my favorites because it was one of the first ones I knew how to mass produce.

    Peeling eggs, tap the "fat" end with the back of a spoon. When the sound changes (you will hear a pop) you have broken the air membrane inside. They peel like a dream after that and it doesn't matter if they are fresh or not!

    The puff/German pancake is excellent with either apple pieces or bacon added to the batter. In Sweden we typically make it with bacon and eat it with lingonberry jam (lingonberries are close to cranberries in taste, so quite tart).

    When my kids were little i used to make dutch puff with the same ingredients you used but also poured melted butter into the pan. We would even eat it for supper. We made a lot of quiche when we had extra eggs too. Thanks for sharing Jessica.

    Your dishes always look so delicious, I'm sure converting to non-dairy has been a matter of trial and error but you make it look easy. Please do some more videos on making coconut yogurt, I'm trying to learn how to make it in a nonelectric maker and I am totally clueless!     I use a pastry knife to make egg salad. It makes chopping the eggs up a breeze and then I use it to blend the ingredients.

    We just made a big batch of pasta noodles recently with a noodle maker just like that😊, I spread my noodles out over a sheet and dry them for storage and using later, I usually make a 5 gallon bucket full, and started recently making sour dough noodles.
