if anyone was wondering how to make potatoes crispy, I'll give the general recipe here: 1. you have to use a mandolin to slice the potatoes thinly, about 0.1 centimeters thick. mandolins are extremely dangerous, so please weigh the risks before using one, and always use a protective glove. 2. once sliced, soak in water with kosher salt and msg for a couple hours. 1 tsp kosher salt: 1 tsp msg: 2 cup water is the ratio per cup water. if you are using sea salt increase salt to 1.5 tsp per cup water. you will know that they are properly salted if they are bendable when you take them out of the water. they should bend quite far without breaking. 3. remove potatoes from water and lay out in a single layer on kitchen towels to completely air dry at room temp overnight, or for 4 to 6 hours in the fridge. using a single layer is very important: do not stack the layers of potato slices, even with kitchen towel in between, or they won't dry out. the goal is to dry the potatoes out once they've released some starch into the water and have been seasoned by the water. a couple desk fans for drying at room temp can speed up the drying process significantly. turn the slices over once during the dry time if you're drying with fans. the outer layer of the potato slices should seem slightly dried out by the end of this process but the inside should still be pliable. 4. you have to deep fry the chips, not shallow fry them. this is not as scary as some people believe it to be. just get a large pot with a thick bottom, fill it up with about 3 inches of oil (that's a little less than the length of your pointer finger) and adjust the heat on your stove to medium. allow the oil to come up to temperature slowly for 10 to 12 minutes. the oil should be glimmering, but not creating dark colored smoke. if it smokes at any point, turn the heat to medium low and remove the pot from the heat to cool down for a few minutes, then continue. if you're using a thermometer, 300 degrees F is a good temperature for frying. you can also reuse your fry oil. just allow the used oil to cool completely (at least one hour cooling time) then strain the oil through a mesh strainer into a storage container. use this same oil for your next recipe that requires frying. you can reuse the same oil 3 to 4 times before discarding. to discard, place the cooled oil into a disposable container, and seal it well. then you can throw it away. or, better, use an oil hardener. this is the best method for disposal. I often use a product called Fry Away. you can purchase Fry Away on Amazon. 5. fry them in small batches until they are cooked through and remove to kitchen towels to cool. repeat the frying process once more while controlling your heat (do not let your oil get too hot) until they are golden brown. you should make the batches small for the first fry, but for the second fry, batches can be larger, since they will no longer stick together. taste for seasoning once they are fried a second time and add more salt or your seasoning of choice if desired. it seems like a lot of work, but actually, it's very little work. just a lot of waiting. the pre-drying helps the chips get crispy, and the pre-salting process keeps them from being bland. I recommend using Yukon Gold potatoes for making chips, as these potatoes are firm, yet they have a naturally buttery flavor that makes a very good chip. I do not recommend Idaho potatoes for at home chip making. they are very soft, and can become gummy due to high starch levels. good luck making your chips! ✨

전문가는 아니지만 감자품종도 중요하지만 키운환경의 영향도 받는거 같아요 저도 수미감자나 남작같이 분질감자라고 사도 물감자일때가 있더라구요ㅎㅎ 하나 익혀봤는데 물감자다 하면 그냥 찌개 끓여먹어요ㅎ
