      I remember one time I was living in a tiny place and only had an air fryer to cook in. I got a wise cracking idea!! Oh boy, I'll take a match box worth or primo pecan wood shavings and use a metal tin to smolder them INSIDE my pressure cooker - what a great idea!
      Spoiler, just before attempting this further read....smoke is poisonous, always...and a smoker NEEDS to let off the smoke. Don't trap it for flavor or any other reason. Omg ... And yes I was an adult and that wrong

    Id personally quarter up those big chunks before the cook so you can get more rendering more char and more seasoning on each bite and have them be bite sized.

      @@he-mansuncle7661you cut into inch and a half cubes the night before, marinade for 12 hours and cook fat side up and you loose no moisture and get more flavor. Or or you cake the skin side in salt for 24 hours, scrape it off and then follow this (standard) recipe until the very end of the cook you pull it off brush some vinegar in the skin and broil it in the oven and you get pork belly chicharron burnt ends. Both ways infinitely better than just seasoning and throwing the whole belly on.

    I prefer to cut them into cubes, little bit less cook time because of them being individual cuts, allows for a better bark on all of the ends

      @russelllitterell2311 With this style of cooking and recipe, the final step where she added brown sugar and sauce then covered it and threw it back in the heat, that would rehydrate and tenderize the skin rendering it to a melty, fatty delicious texture. Yummm. That's why it makes no sense to not have the skin if you decide to go with pork belly.

    Need to cook for longer, they should shrink but. Also, adding a stock of butter with the sugar and sauce adds a lot of flavor.

    Interesting process, but I prefer that all sides be carmelized. Seems like you'd be missing out on some flavor here. I also prefer mine a little over one square inch for the perfect bite. Still looks good though.

    The whole point of burned ends is that all surfaces are “burned” and have bark. That’s what makes it good. These are just wet bbq-sauced squares of pork belly.

    More like cooked ends. After the second covered cook, paint it with a bit more sauce and leave it uncovered in the smoker til the sauce carmelizes and sets.

    Chinese bbq shops already are doing this. If you stop by chinatown. And try the roast pig its. Taste as good if not better like the roast pork butts❤❤❤

    I live in Washington, my favorite local wood to cook with is madrone. Cherry and madrone is a good combo too.

    The only problem with this is 1. This is how almost everybody makes burnt ends and 2. They don’t look “burnt” enough to be called burnt ends, these are just glazed ends

    So why didn't you just cut them into cubes first? Wouldn't you have gotten more seasoning on each bite if you did?
    I don't BBQ so idk if theres a difference between cubing first or cubingg after the first round of cooking.

    Burnt ends dont come from pork belly, and those aren't burnt ends. Its crazy how people just started calling random cuts of meat prepared nonsensically "burnt ends". This is just candied pork belly
