how do you remove a stone from those cheap items used to get a better stone? I didn't find the right scroll to remove them
It's called a release scroll, otherwise you can just combine two items to remove the stone as well.

You can, I'd just suggest getting a shield scroll to prevent breaking. If you're just talking about combining stones, I think so, yes.
