Nice twist to your Malay pickle with Indian spices. The typical Malay or Nonya pickle is known as Acar. A simple one consists of vegetables like julienned cucumber, carrot and pineapples which are seasoned in a fried chilli rempah mix using dried chillies, garlic, shallots, tumeric and belacan. Sugar, vinegar and ground peanuts are then added for an aromatic, sweet and tangy taste. Pickle is ready to eat the next day.
