What an amazing journey. On my Camino from Madrid to Santiago, food weight was also a problem as I could not count on finding an open shop in the smaller villages. Bradley Chermside just had the knee pain guru in Episode 85 of his Pilgrims podcast in which he discussed the importance of staying hydrated so that joints stay lubricated. He also said it is important to rest 5 minutes every hour. Taking the weight off your back each hour may make a difference. Ditch those flip flops! You can always buy what you need as your journey progresses. Buen Camino!
