You got way too many flawless victories man you need to put it on very hard instead of very easy otherwise there's no point in playing. It's not very hard because you open each match with a 51% maximum damage with no blocks.
Looks like you didn't pay attention to the beginning. Pause at 0:12 and you'll see the difficulty set to Ultimate. This is played on the absolute hardest difficulty
The game is definitely modified, if you observe carefully you'll see for every move the opponent does there's a counter move from Quan Chi. There's no way they're really playing the game.
