The color is fine, the +35 offset is not, in my opinion. For 9.5" wide on a WRX/Sti , I like a +40-45et. I'm not a poke or stretch fan. Yes, only a 5-10mm difference but your not forced to run a 255 or less tire to avoid rubbing and fender rolling. Where are the old wheels going?
Why do all that for it to be used as a show car? The old tires are 10 years old? Good ... Then there is no justification to be gentle on the track, and send them to tire heaven on a trackday.

haven't gotten an alignment since our adjustments but it seems to be around -3 with rear fenders rolled

somewhere around -3 should be sufficient, you may also need to roll your fenders

Yes, ARP extended studs.
