I pick the flowers only if the stems are shriveling which means that there are no seed growing. If the stems stay green and healthy even when the flower is brown, I leave it.
Don't they need to be stored cool for a while? Also could get moldy in a ziplock bag. I would put one of those moisture absorbing packets in a ziplock or use a paper bag or envelope but I am just a beginner seed saver. Thank you.
Also, if they are fully dry, they will not mold at all. I have done this for many years. They are not like bulbs that need to breathe a bit. Also once the seeds are fully dry and saved in a ziplock, they are protected from the outside moisture too.

I pinched off dead flowers patels only, and leave the middle part (seed) on the plant. Thats how my plant looks tidy and seed can dry on it too.

Depends on where you live. They are cool weather plants. Find out your usda zone for your address and then you can find the right time to plant these

If you let the seeds scatter, they will grow next year. It's not the same plant that comes back, new plants grow from seeds.
I planted it in window box for the first time and saw some flowers buds, but it can't take a heat and got dry out.

No they don't need to be stored away in a cool place specifically. They will be planted in winters and will automatically cool down before planting.
