    Years ago, I had the chance to meet Lidia Bastianich. I asked her about her pretty frequent usage of canned tomatoes, and she was FIRM in saying that, unless where you live is in the middle of tomato season, canned are almost always going to be a better option.

      Agreed! I made the feta pasta with canned whole cherry tomatoes that I carefully drained the extra puree from, and it was delicious. It even browned up in the oven just as nicely as fresh tomatoes would!

    Here in Greece we combine almost everything with feta, usually not cook them together but we keep it on the side. Everything is better with feta!
    P. S. I think that a video testing international recipes would be very nice. You could start with recipes with similar ingredients. I could definitely provide you with any kind of info regarding Greek recipes! ❤️

    In the feta pasta, I added spinach, for more color, and nutrition for my little to eat and get his veggies! I also added some lemon zest, some red pepper flakes, and a half lemon squeeze of juice!

    I would recommend putting 1/4 cup of parm to make it more saucy and then topping it off with a Sprinkle of parm because you can never have too much parm!! That pasta goes well as a side with some seafood!!

    Am I the only one who was SHOCKED when they found out that the vodka sauce is just tomato sauce with ONE TSP of vodka?? I would not even dare to call it vodka sauce :))))

      Ohh.. It's because it tastes a bit like vodka... Like... Sweet liqueur . And I would definitely ignore a recipe that says just 1tbs....more like 1 shot.

    Rachel you forgot to put Parmesan cheese in the vodka sauce and also you’re supposed to put the vodka before de heavy cream!!!!!!

    I think I would add a little pasta water to the feta dish as well. Also some roasted or grilled shrimp would be good for some protein.

    I made the feta pasta last week and added mushrooms and spinach to it, it was so good! For seasonings I did garlic, salt, pepper, oregano and onion powder. So good! I paired it with steak as well.

    I’ve made the feta pasta a couple times and it takes it to the next level if you blend the cooked feta and tomatoes and add a tiny bit of pasta water!! Soooo good.

      @@Chequeidk as long as she gives Gigi credit for giving her the inspiration no one will have reason to “cancel” her. I’m sure Gigi was inspired by someone to make her dish. She didn’t invent pasta with vodka sauce. There’s a ton of recipes online and a few that I found that has the same ingredients as Gigi’s. One specifically from Bon Appetit made by Claire Saffitz back in Feb 2018.

    Pasta loving Finn here.
    I highly recommend adding 2/3 cup (~160ml) of heavy cream to the oven pasta while mixing it after it comes out of the oven. Takes it to another level. 😙👌

    And the technique you used to cut your basil is called a chiffonade (pron. shif-foh-nod). Mince is cutting into little even squares, chiffonade is a term used for thinly slicing leafy vegetables or herbs.

    My sister made the Finland pasta twice. She adds garlic with the tomatoe both times but once with feta and then yesterday with an herb and garlic boursin and a touch of feta. She preferred it with the boursin cheese. I have yet to try it but plan to this week.

    I don’t understand the bland comments for the feta cheese dish. I’m guessing you haven’t tried real feta with it! Feta is a strong salty flavour, sort of like a string goats cheese in my country. So this dish was super yum!

      This!! Every video i see where people have a bad outcome is because theyre using some dry, strange, cheap feta. Or people just arent seasoning at all

      In Canada we Greeks call it the Canadian feta which is the cheaper cows milk one (we bake with it more) and then the Greek feta from Greece you eat along with your meal. This also is not a finish dish, it’s Greek. We’ve been making it for as long as there was feta. She should of used the Greek feta made with sheep’s milk.

      I’m assuming because feta (even the best kind) with all the pasta, oil, and the tomato will take some of that saltiness away or like distribute it so it feels less salty than just feta.

    I've made the TikTok Feta Pasta....LOVE IT! However, I didn't use the Italian herbs,,,,I was much simpler with fresh garlic (I love garlic...so lots of garlic), salt, and pepper. It was delicious!

      @@RachhLovesLife I add bacon to a pan with 2 garlic cloves until crispy (like those bacon bits you would use to make carbonara pasta), and I add that to my oven dish with the cherry tomatoes and the feta cheese. Besides the garlic cloves I used to cook the bacon with, I add about 4 more to my oven dish. I also add fresh mozzarella and a spoon full of ricotta cheese, basil, salt, oregano and the olive oil

    Made the feta dish for my anniversary last week. Used a bit of lemon zest and even a bit of the juice.. brightened up the flavor SO MUCH. We also added shrimp, it was delicious. We didn’t use cherry tomatoes as I hate tomatoes, but I used a kind called “sweet pops” and even I liked it.

    My favourite pasta sauce is this:
    140 grams of sliced bacon (cut across the strips to make fine thin strips)
    1 can of chrushed tomatoes
    2 deciliters of creme fraishe
    1-2 garlic cloves (pressed or diced)
    Put the bacon strips in a hot pan and heat them up until they start to crisp. You do not want them to be crispy, but not to sloppy either.
    Add the garlic and stirr.
    Put the tomatoes and creme fraishe in the pan and stirr till it is hot all the way trough.
    Eat with pasta of your own choice
    No extra spice is needed.

    Add the Peri Peri flakes with the onions during the first step, if you want it spicier. The capsaicin is much more soluble in oil, especially in hot oil.

    I’ve seen a lot of tiktoks where with the feta pasta they put the mixture in a blender after baking/broiling it! it makes it more of a combined sauce as opposed to just chunks!

    Ive tried the feta pasta, im not a huge fan of tomato so I didn't really like it that much but I'm 100% gonna try that second recipe cause it looks yummy

    My mom uses harissa and adds it to the cream instead of red pepper flakes she says it gives it an earthier taste, I like to add some shrimp and fresh chilli peppers to the finnish pasta I felt like it needed something when I first made it!

    Love the tiktok pasta. We add double the garlic, along with red pepper flakes and honey. I'll add ground beef if we want it to be a fuller meal. Turns out great! I think Chris would appreciate the meat, and the honey helps balance out the tang of the cheese and tomatoes. 👌🏻

    I added more cream and tomato paste when making the sauce. Sometimes pasta water can water down the spices so I just added more of the cream and tomato paste and it worked out ❤️

    Feta pasta I found to be too thick/heavy. Pasta water or even doing half the quantity of it and mixing it with some olive oil and tons of seasoning as you would a pasta salad was delicious and more enjoyable I found! Also, stirring in raw garlic after it comes out of the oven instead of putting it in at the start helps brighten it tremendously!

    You should try a spinach version of the feta pasta 😃 I'm Finnish and found the recipe in a magazine article where they were raving about the original. It's very similar: add feta, frozen spinach, minced garlic and white wine (I've used vegetable stock) and some black pepper in an oven dish and bake 😊 I think it's actually better and I'm not even a huge fan of spinach 😁

    I add thyme, Italian seasoning, dried basil, more olive oil than you added, I add onion powder and garlic powder and fresh garlic, I reserve some pasta water to add to the sauce depending how liquidy it gets and then I top with fresh basil.

    For the Vodka pasta, try adding in the pepper flakes with the shallots/garlic and double the amount. Then BEFORE you add in the cream, add the vodka and cook it down. Then add in the cream, and before you add the pasta, add a cup or two of parm, until the pasta is paste like, then add in the pasta water to loosen it and then finish the pasta in it. You may even be able to cut the cream out entirely if you keep enough pasta water and you add the parm in this way.

    I made the feta pasta but I blended it after taking out of the oven with a 1/4 cup of pasta water because I hate baked tomato skins and my hubby hates feta clumps in pasta. Blending it made a super smooth creamy sauce, I thought it was really yum, hubby did think it was a bit too salty and tangy though so next time might do less feta to tomato. Such an easy recipe though, it’s so good!

    I saw a video where someone made this recipe but used dessert substitutions, like marshmallows instead of tomatoes, butter instead of olive oil, and chocolate bars instead of feta. So that would have to be my favorite one. 😂

    I have made the feta pasta . I ended up blending it together to make a sauce I added a tiny bit of pasta water like 2-3 tablespoons of cream cheese and parmasean cheese. It was so goooood 🤤

    You are supposed to mush everything together really well, I mash everything like I would when I make mash potatoes! I also throw my garlic gloves in hole and they get soft and mash up with everything and that’s what gives it a really good flavour!
    I used cherry tomatoes, feta, olive oil, basil, parsley, Oregano, crushed red pepper, garlic gloves, salt and pepper and your choice of pasta :) bake on 420-450 for 25 minutes and then broil for 5 mins
    Mash everything together really well then add your pasta and serve :)! I find the key is to not chop up your garlics!!! Make sure they are cooked until they are mushy and easily mashed up.
    If you tried the tik tok pasta and didn’t like it, try it my way! And make sure to mash everything up as soon as it is taking out of the oven!

    It’s interesting, I’ve seen a lot of ppl make the Unifetapasta and the majority did NOT like it. But the changes Rachel made in cooking the dish makes a huge difference. Using a cast iron, not mashing the tomatoes, broiling it(I haven’t seen anyone broil it just bake mash and add pasta). I’m tempted to try this….well lol I can’t eat feta. I’d be tempted to try, I love pasta. I’d use Roma tomatoes myself just because they’re the only tomatoes I can tolerate though.

    I love both of these! Soooooo good. If you save about a cup of pasta water and add it when mixing the feta pasta it gets creamier and saucier (plus I slice the cherry tomatoes in half). Omg, now I'm hungry!

    my feta actually was a lot gooey-er and made the sauce really creamy i also added some pasta water to help it come together but just like you i was expecting everything to be saltier and well i had to add salt in the end :)) i did also add some other stuff that was just lying around the fridge like some cubes of zuchinni and kale and two or three sun dried tomatoes and it was really good. I did love the vodka pasta it was so so creamy and you just got full like i couldn't eat a fork more of that without exploding but really good as well :D

    You should cut your basil stems just above where the bottom-most leaves are growing! It will grow even more leaves and help prevent it from getting too tall and leggy! :)

    For the feta pasta add the pasta water as others have mentioned. Also, smash the tomatoes with a fork when finished. It helps it all meld together into a sauce and not tomatoes with cheese.

      Yeah, she never said that it was her recipe tho. Gigi likes to cook recipes from different cookbook authors. She didn't claim that the recipe belongs to her but the internet called it that way to draw attention. It's a fairly common dish anyways so most recipes have the same exact ingredients

    Rach, pinch your basil plant on top rather than getting the leaves from the side. Pinching the top wil encourage new growth and will produce 2 branches making your plant look bushy over time.

    I always add some bacon to the vodka pasta. It adds just a little bit of flavor and for me it's what makes the dish 10x better 😋🥓

    You need to crush the tomatoes up it makes it more creamier. I also add a little heavy whipping cream. Just in case you care.. lol

    Lol in my country minus the vodka, that's a basic pasta 😂
    Here is the recipe :
    TS of oil
    Sliced Onion + garlic
    Salt+ black pepper + red pepper
    1.5-2TS of tomato paste ( fresh tomatoes are also optional if they are in season, usually not)
    Meat ( any type, usually chicken)
    Put all but tomato in a pot and let it on law heat until the onion and garlic are golden then add tomato with a cup of hot water and stear for about 5-7 min, add more hot water 5-6 cups and let the chicken cook, once it's done, add a bit more hot water to the sauce and put in the pasta ( we cook the pasta in the sauce we don't cook it separately that's so all the ingredients come together)
    When it's half done and the sauce is thick put it in a casserole some shredded cheese on top put in the oven for like 5-10 min until it's done and bonne apetit .
    Edit :
    Extra ingredients : Basel on top, Rosemarie added to the sauce, bay leaves if you want, green peppers
    Put them when you put the pasta

    For me, garlic is never optional 😂 it is a requirement! These both look amazing and best of all, I now have 2 dinners planned yay us! Thanks Rach!
    EDIT: Mine was a bit thick and I used some of the pasta water to thin it a bit, worked great! I love feta! Edit 2: My son’s girlfriend adds hot sauce to everything (literally uses it as a dipping sauce for steak, lol) and it made a huge difference in the vodka sauce pasta dish! My son has ALWAYS liked spicy food over anything else even as a toddler! He was about 2 and was in the “I want a bite of everything stage” and my husband let him have a bite of chili and my son said “It tickles my mouth” and just giggled! It was precious and we called spicy food mouth tickles forever (or at least until he became a teenager and made me swear to never ever say it again 😂)!
