Why you sealed the bag while it's still warm? does heat create moisture? Thank you.

You can seal the bag after the cool cycle if the Humidity in the air where you live is not high. There is very little or no moisture left in the coffee at this point. I often put the coffee in a wire roast pan and take outside for a quick shake to remove any leftover chaffe and cool to room temperature, but this step is optional.

I have noticed that the SR-300 has a two-way switch for Temp and the settings are Heat/cool. Is the SR-300 always in heat mode? The switch does not appear to be able to change to cool.

The Heat switch is only ON or OFF, not hi/low. Unfortunately the SR 300 is no longer available new, I leave this video up to show how easy roasting can be, and for those who inherit one. You may be able to find one used but like any houshold appliance I caution buying a used one. The current entry level unit from FreshRoast is the SR-540 it has better heat control, larger roast chamber, and a temperature read out. If you want absolute ease of use the New NESCO home coffee roaster is the simplest.

Is there a compartment that collects the chaff?

you didn't mention if this is fully programmable or do i have to be physically present when it's time to cool the coffee so that I can push the button?

Best if you stay within sight of any coffee roaster while roasting, but you set the Time at the beginning of a roast. The SR300 automatically goes into COOL mode when the time expires. You can ad time while in ROAST mode or push the COOL button at any time during the roast to manually put the roaster into COOL mode which lasts 3 minutes. Most experienced home Roasters will set the timer for a bit more time than they expect to need then push the COOL button at just the right time. It's pretty easy, just on/off, Time ad and minus, and the COOL button.

    do you recommend this ?

      Jess,
Are you asking Home Roast Coffee if I recommend the SR300 Roaster or Others if they recommend the Video?
If you're asking if I recommend the Roaster, absolutely, it works great, is easy to use, and has been durable. If you are looking at Hot Air Roasters you also want to look at the FreshRoast SR500, same size and maker but more features you might want when you are an experienced Home Coffee Roaster.
If you're more interested in the Video you will notice that it is aimed primarily at folks who are new to Home Coffee Roasting and coffee roasting Appliances.
