Quang to help with the crust remove the chicken from brine and pat dry first. Then do the battering like you did in the video and let the chicken sit for a bit before you fry.The flour will mix with the moisture soaking it up. It will not flake off as much and stick to the chicken better after you fry. Finally, after cooking let the chicken cool some before you eat it. This will allow the juices to go back into the chicken keeping it moist without it coming out all over. You want the chicken to be moist not the crust. When meat cooks water is being forced out. After it is cooked letting it rest lets the water inside go from a steam state back to a liquid form which will stay in the chicken as long as it is not over cooked. Example would be a steak that is cooked on high heat to form a crust then left to rest before eating. Hope this helps.

When I cook his recipe my crust does not stay crispy past a few mins...can you offer why? I follow it to the T
Try double frying. First, he cooked them too long. Fry for 4 min's at 375. Take them out and let them sit for 20 min's. Fry again for about 1 min at 400. Works every time.

It does not have to be it just depends on what you are trying to accomplish. If you want to cook something just heat it till safe to eat. Easy. But if you want to develop flavor, texture, and make it taste good basic skills are needed. Doing something well means you have to put in the effort. Difference between fast food and quality meals you will crave months after you have it. Need my fix!!! LOL

I've made these twice and oh my goodness. They are light tender and moist. Delicious! However I was doing a couple things wrong. I wasn't allowing my oil to heat up long enough. When I left it 4-5 for 20 minutes, that did the trick. Mistake #2, I was making my batter to thick. Thinned it down a bit and bang! Thank you for sharing such an amazing recipe.

Did you figure out why the crust cracked
Cracking from the moisture, try patting super dry before putting into the first batch of flour instead of directly from marinade and into flour. It should help and also should help with no soggyness
shake off as much of the pickle juice as you can or use a thicker marinade, like hot sauce or something

Can you tell me why you need to add club soda to the batter? I've never seen this in any other recipe. Is the purpose just to fluff up the coating and create fissures when frying to make it look nice? Also why marinade it in pickle juice? Wouldn't that make it too sour?

I used to like them back then too, when I was like 6 and didn't know how to cook yet. I started cooking when I was around 12. I cook from scratch most of the time, nothing compares to it. My dad brought me the sandwich, I didn't want to be mean, and not eat it. :( It doesn't taste good anymore. The other sandwich, I think it's a spicy chicken one, that's like 5 / 6 bucks is really good. Best fast food sandwich I've ever had. Bk is a hit and miss. We are in a small town where they just build one here.

I am no kind of chef, Quang. But I did do some "short-order" cooking during a couple of the summers of my youth. I live in the deep south U.S. state of Georgia. How I was taught to cook chicken strips and chicken livers was to marinate them in buttermilk (en.wikipedia.org/wiki/Buttermilk) for several hours, then dredge them in salted and peppered flour and finally fry them up in a deep fryer. Now I admit, your flour had many more seasonings in it, but it did look good. Forget the wet coating. That is why your crust cracked. That is fine for bone-in chicken (I think because they cook longer), but not strips.
