    Hello, Thanks for your interest in my Jaggery making video, and yes, it's very safe to eat. At Dhingra farms, we make chemical free jaggery. We use two filtration process to purify sugarcane juice. One is the net, which separates the dust and other big impurities from the juice.For the tiny impurities, which get pass through the net is removed by adding sukhlai juice(A lady finger type plant which traps the impurities in the juice and forms green-blackish lather and then further picked up by our workers with special tools as seen in the video). The remaining is 100% juice. Many manufactures uses chemicals to remove impurities but that chemicals harms the human body and is complete unethical by our standards. As for hygiene, we clean our machines, tools and pans every day. We are known for our quality products in our area.

      Yes, Sukhlai is being added in the third pan @3:40 to trap the impurities. After trapping the impurities, it becomes lather and comes at the surface which then is collected by the workers. @ 3:37 The lather is being collected in the bucket with yellow net. where the impurities get trapped and extra juice flows back in the pan. This wasted lather have two uses. It makes a great manure for agriculture. Or It can also be fed to pigs.

    This is very impressive! I have sugar cane growing in my backyard can I make jaggery using electric cooker......does jaggery get crystal after process?

      Yes, you can try. Hard task would be getting the juice out of the sugarcane. Rest is just boiling and filtering of the juice. Just don't over do it or it will become hard like stone.

      You mean over do by heating or filtering? i have an old cane juice extractor and works well. What I did not know is how to make brown sugar by heating the cane juice. Will surely try this.

    As far as anyone being worried where cleanliness is concerned the cooking process will kill just about anything the filtering process didnt get.Molasses is made in nearly the same way. Its just isnt cooked down as much and no air is mixed in while cooling. Hand made fudge is cooled and airated in the same manner. I wouldnt worry about consuming this product what so ever. I might wear gloves while scooping and placing the end product to dry but so what. When in Rome do as the Romans right? Very cool video. Id love to try this.

      Hello Necati,
      The color of jaggery depends on the quality and variety of sugar cane. There are hundreds of sugarcane varieties, some have dark juice while some have light creamy juice. Some are easy to peal while others might break teeth while pealing. A good jaggery should be golden in color. It should not be too dark(dark brown). Dark brown color means the juice isn't properly filtered and a lot of impurities are mixed in the juice while making jaggery. Meanwhile too much light color indicates that chemical was mixed to make the color light. So always go for GOLDEN color.

      hello sir,
      jaggery is made when sugarcane juice is boiled and its temperature reaches 114-116'c. then its cools and becomes solid. It is a well timed process otherwise the final product might not become proper solid or may get over cooked, so it must have to be done right. As of the technical parts, you need a Crusher, Pans, sugarcane and correct furnace model for proper air flow.and fuel( dry by-product of sugarcane). That's about it.       when it is boiled it become double nutrients as per ayurveda but people are so full they run behind sugar instead of jaggery. jaggery and sugar have same raw mateerial but one is danger that is sugar and other is very very good that is jaggery. sugar have sucrose and jaggery has friutrose which is very essential for body.
      sugar cause diabetes and other chronic disease and very hard to digest.
      jaggery doesnt cause anything and it help to digest other food also so eat piece of jagger after meals everyday.

      Hi, the whole plant of ladyfinger(not actually ladyfinger but it's fat cousin which looks like ladyfinger) is beaten with a stone or hammer and then it's thrown into bucket filled with water for good 2-3 hours. The whole water become slippery slopy type(just like ladyfinger juice). That slippery sticky water mixture is then put into hot(not boiling) sugarcane juice and gently stirring for 1-2 minutes. The impurities will get trap in that sticky liquid and the liquid will become form and comes on the top of the pan. Carefully collect and separate all the form with a big spoon. All done.

    Mr Yuvraj thanks so much for sharing this video. But it will be better if more hygiene would have been added in the process of making the jaggery. I mean the sugar cane should have been cleaned and washed. Also, at the last stage the man standing scooping the jaggery out is standing on the same piece of cloth where the pieces of jaggeries are being displayed. I enjoyed the video though. Thanks so much.       Hum cane crusher subha 9 bje se shaam ke 5 bje tak chalate the. And gurr raat ke 10-11 bje tak bnate the. Approximately, 700-1000 kg gurr bna lete the.
      Agar jada production kerna hai toh day-night chala lo and double production ker lo. Sabki Apni apni requirement hoti hai. Agr kum requirement hai toh hum capacity wala crusher lga lo and jada requirement hai toh jada capacity wala lga sakte ho.

      This is just like sugar but without the chemicals. Over consumption of anything leads to side effects. Over eating of any kind of sugar(jaggery or white sugar or palm sugar or fruit sugar etc.) will cause cavities.

      No, it's just used as a fuel for fire.

      Sir, isko sukhlai ka juice khte hai. sukhlai ek podha(plant) hota hai jo bhindi(ladyfinger) jaisa hota hai. iss podhe(plant) ko crush kerke pani ke drum mein mila ke 2-3 ghante ke liye rakh diya jata hai. fir 2-3 ghante baad nikaal diya jata hai. iss se jo podhe(plant) ke beech ka ras(juice) paani mein mil jata hai aur pura paani laese(sticky) ho jata hai..
      sukhlai ko milane ka kaaran(reason)
      Iss se jo bhi juice mein mael (impurities) hoti hai, vo sukhlai ke juice mein kaid(trap) ho jaati hai. aur baad mein ye ubala(boil) khaker jhaag(foam) ke roop mein upar tairne(float) lagti hai. aur baad mein bahar nikaal li jaati hai.
      aam tor per gurr bnane vale mael ko bahar nikaalne ke liye chemical ka istemaal kerte hai, per chemical insaan ki sehat ke liye hanikaarak hota hai. iss liye hum natural substitute istemaal kerte hai.
      adhik chemical vale gurr se dhoodh(milk) fatt jata hai aur aap uski chai nhi bna sakte. sukhlai ka upyog kerne se dhoodh nhi fatt ta aur ye sehat ke liye hanikaarak bhi nhi hai.

      Hi Tapan,
      Impurities comes in many forms, i.e. Chemicals/ powdered stone/ colors etc. The best way is to get it tested in Lab. However it's not possible for everyone.
      So here are some tips you can try at home to test if your jaggery is pure or not..
      1. Testing for heavy powder.
      Take a small piece of jaggery and try to dissolve it in water. If it dissolves fully then it's pure.
      If something is left behind then Probably heavy powder is mixed in it to increase it's weight. That powder is made from the soapstone(also used in making talc powder). It's not harmful to human health but it's cheap and heavy.
      2. Testing for Chemical
      Some manufacturers add chemical to give good color and sweet taste to jaggery. These Chemicals are harmful to humans. You can test Chemical by simply putting medium size jaggery piece in milk and try to boil it 5-6 times.
      If the milk doesn't goes bad after repeated boiling. Then it's safe to consume. But if it does get spoiled, throw all the jaggery in dustbin.
      It's not always the chemicals are added while making the jaggery. Sometimes Farmers Spray harmful pesticides on their sugarcane crop to save it from pests. These chemicals then get trapped into the sugarcane and makes it's way into the Jaggery.

      Jaggery is a seasonal product. The production of jaggery starts from December till mid march during sugarcane harvesting. Our jaggery is currently out of stock.

    to all the ppl complaining about hygine... wtz unhygenic here...ppl using hands?? dun u use them in ur kitchen?? or black big stoves... tell me if u heat a pan everyday on such high flames...they wont b clean as our home utensils...n if u think this is bad...lemme tell u...eating sugar is worst...its healthy form of sweetness. even if u see molasses process...u ll see the same things...either in small containers...they r standing instead of these ground stoves. its nothing wrong here... n for cooling u need to put on a slab... we eat it here since ages....n believe me...it tastes amazing..

    I have a bag and unfortunately, from the owner of the "India grocery store: to the internet and you tubes......for a person to make a recipe there is no tutorial, no directions, no recipes...I am told to grate this, and it is so hard, I will be here all day, and my fingers will be grated to the bone. What's up with this ? Sesame bars should be the easiest and most popular recipe, but all I see are ones make with cane sugar. .not jiggery, which is healthy. I see the benefits but what good is it when you can not cut it, grate it mill it bite it...........to make anything but a boiled cup of tea ? Even ginger is not this difficult to use.       Hi Elizabeth, Try beating it with some hard thing(small hammer/stone or the flour roller).
      I know its difficult to cut and grate it. When my mother wants to use jaggery in some recipe or just in tea, she takes a small piece of jaggery in a kitchen towel(or any cloth) and wraps it into the cloth. then she hit it with the roller(any hard metal/plastic/stone will do the trick). Jaggery get crushed and becomes powder. then she adds it in the recipe or tea.
      If you want to make sesame bars, you have to dissolve jaggery and half sugar in small quantity of water. Boil the mixture and when most of the water get evaporated, take the mixture our and put it in a tray. and then add roasted sesame seeds in that and mix it well (note: its a time bound process, you have to quick and precise). I believe there are some correct recipes for making that bars. try searching by typing- (gurr ki chikki), (til patti), (til ki chikki), (gachak). these are local names and you will surely find what you are looking for on youtube.

    they added the washing powder in order to get fair colored jaggery otherwise it will be dark copper colored

      Dear Mr mR, As i mentioned in my earlier comments, Color of the jaggery depends on the variety of sugarcane. we Do NOT practice such unethical methods. we believe in quality over anything.

      Hello, Thanks for your interest in my Jaggery making video. Due to its nature, jaggery cannot be made in a closed room. It have to be opened for the steam to get away. machinery is deeply washed every day twice(before and after the process). As for the packing, we tried for 1kg, 2kg and 5kg packing, but failed. our customers are local, they buy in bulk. thus, it is sold in 35kg big carton. The employees aren't dirty or anything, they are just brown(this is our skin color), they are provided with proper cleaning kit. Bathing is necessary for them.
      If you find this disgusting then you clearly haven't seen other jaggery making videos. Our is 1000 times cleaner then them. Even your favorite restaurant kitchen is messy than this video. i can guarantee you that.

      all that looks good - packages, colours, companies will kill you with chemicals, this is what happend when British entered India. They destroyed everything.
