    Been making my own mix for a few years with excellent results.. Only took me two months and 11 updates to my recipe. 12% sugar, 6% fat, 12% MSNF, 0.5% stabilizers/emulsifiers.. viola!! Excel is a chef's best friend for recipe work.. 🙂

      Are you using Taylor machines by any chance? We went the route of trying to make our own as well, but the machines butter anything above 6.2% butterfat. Admittedly the buttering is most apparent after 48 hrs (going into standby ay night) and at a very low sales volume. I assume that moving through the product quickly enough might avoid buttering. But the Taylor mechanics told me their machines can handle mixes with 0-12% butterfat. Thank you for any troubleshooting insights you may be willing to share! I am very grateful for your time and energy.

      Yes we've got a Taylor 723 and a 713. Both do excellent with the mix we make. Work backwards from your finished total weight to determine all your percentages. The math is a little weird in that it goes recursive, but about 4 iterations will do it...

    Can you mix other flavors into a commercial mix to create unique flavors?

      I use flavorings in the vanilla mix all time.

    Could I use the premade vanilla liquid mix in a regular machine but add a certain amount of a flavor or flavor syrup without damaging the machine or throwing off the consistency?

    this is unacceptable. I'm not looking top serve the public. i just want to take my homemade yogurt and turn it into softserve. I'm ok with tweaking my recipe until it works correctly.

      use your yogurt, mix it to 12% sugar, 6% fat, 12% Milk Solids Non-Fat, and 0.5% stabilizers. more than about 6-8% fat & it'll "butter" out when you churn it. I'm assuming you're using a soft serve machine to do this.. If not, the recipe is not for you...

    Hey there could you discuss the pros and cons of using a 4.5% butterfat premix like Darigold and a 10% butterfat premix. Does it change the flow through and cycle time?

    In terms of cost, will it be cheaper to make your own soft serve mix? Brands like Pregel has fantastic soft serve mix which just need to add water, but the cost is pretty high.

      Mine (as of 9/2023) costs roughly $14 for 160oz yield of mix)

    I've seen a lot of different things that the ice cream is dipped in after it comes out of the machine. With that, you might ruin some ice cream, but not the machine.

      how do you source a dairy company to make mixes? Is it just a local dairy farmer or should I be searching for something different to find that kind of thing?

    Ok living in Panamá central América. Dificult to find soft serve mix Here. I can buy in United State. And sent to my agent in miami. Need a sugestión where to buy my powder soft mix. In USA aat good price. Amazon price is to hi. For me. Any way I Will have to buy in cases. So I guest the price Will drop

    For soft . You must create your own
    Because every single machine need a specific mix.
    But it's so hard .

      Really I feel this whole vegan thing is absurd. Burger King is selling their own version of soylent green burgers, and vegans feel free to lecture every one they come across.
      Meat is good, cheese made from milk is good, real leather makes good shoes belts etc.

      no unless you add something to limit the ice crystals, it'll get hard as stone..

      Absolutely. I made my own donut mix too and yeah sure theres failures, but theres also available mixes online. Its not like its going to fuck the machine. Just let it drain, clean it and try again. Save money and make a unique home made ice cream.
