Great recipe! I've never seen the squeezing the flour mixture in like that, I'm gonna try it for sure! Beef tallow takes fried chicken to another level. We had a great fried chicken restaurant here that used tallow for almost 50 years. The old owners finally sold and the new owners refused to use tallow. Turned it into just another chicken joint and they're no longer in business.
I've made this three times now, and I'll never do fried chicken another way again. I'm from the South and this is easily the best recipe I've ever seen. Only thing I do different is adding some celery salt and cayenne like in an old family recipe. Excellent work!

i just made my own tallow but i do not want to waste it all for just frying, besides i think its too much using juts pure tallow for frying i think i heard some ppl add some of it to there reg frying oil for the flavor like maybe a few tbs , what do you think? id like to do this for frying french fries so they taste like mcd's but not sure about chicken it might have a confusing smell and taste
New sub. It looks epic. I'm from the UK but living in Germany, beef tallow isn't cheap over here. While I can get 6-8 uses doing proper English style chips in a fryer (for the 5 of us - kids love em using peanut oil and filtering it afterwards)....I search for some tips on the reuse of tallow. It's defo the way to go and actually healthier than peanut oil (sitting in the middle between saturated and non saturated/processed crap to avoid) IS there a re-use? or it's one expensive (but epic) chicken dinner? Any follow up content on what you do with the cooled tallow (before it sets) would be golden. A one use only job would be out of reach of most people during a time when they take the piss (double in some cases for butter) with prices while claiming a 12% increase on the TV (the enemy of mankind right now)
Absolutely re use it! I re filter it through a new coffee filter after each use. And I’ll use it until it starts to smell. That typical old fat/oil smell. I probably get a good 10-15 used out of it
You could! But if you’ve got it covered in buttermilk, the smoke won’t do a whole lot. If you wanted to smoke it, I’d leave out the buttermilk and just straight up season > smoke > fry!
For this batch, as it’s expensive being beef fat from brisket. I filtered it through a sieve and then a fine mesh cotton strainer. It’s almost as good as new! At some point, it will need throwing away. At that point - I’ll fridge it so it goes hard. Then scrape it into the food waste bin.

No it’s very soft at room temperature. I believe there is a difference between the fat trimmed from a brisket, and the fat taken from around the organs such as kidneys. I know you can make candles with beef tallow - but I’m not sure how that works. The tallow made using simply rendered beef fat is very soft.

Not a criticism on your part but how did people cook without thermometers...trial, error and experience is the way to go. Also...the chicken looks fabulous 👌
As someone from the black country, beef dripping is basically everywhere. Not a chippy fan but we have some that use dripping and now again I'll just use any chippy, the oil that sticks to your mouth and teeth is absolutely disgusting. The chips if not fresh are even worse for it.
Been cutting seed oils out of my diet and this looks bangin. Doing chicken and waffles for Easter and gonna use this and boneless thighs.

How do you collect your brisket tallow? or is it just trimmings?
Sad thing with tallow is you gotta eat the food hot. When it becomes lukewarm the tallow becomes solid again and it's like you're eating a candle.
The trick is to put it in the oven at 200°F while you keep frying the rest of the chicken. Then you can serve it all hot at once :)

You definitely can, as I believe it cooks like all other animal fats. Though It might be hard to come by enough of it for deep frying

I would agree in almost all cases. However this flour mixture is nearly 20% salt. 51g in 260g of flour. It does not need more salt, believe me.
