ive been running undergravel filters for 40+ years and never had to "tear down" to clean the gunk out. just a good gravel vac job every couple weeks. wouldn't run a tank without one myself. jmo

I used to have an undergravel on my 30 and it used a power head, not an airstone.
Keep in mind an undergravel filter has no filter media where it can deposit any gunk removed from the water. It winds up accumulating under the tray. The only way to remove it was to break the tank down.
And if you have live plants, use caution as the roots will sometimes grow through the slits in the tray. If you have a sand bottom, the grains maybe small enough to fall through those slits. Blocked slits will cut down on how well the undergravel filter can do its job.
Having a sand bottom and live plants are the big reason I junked my undergravel in favor of the two hang on backs that I had at the time (those are now gone in favor of two canisters-I'm sure those two filter types are future episodes)

I'm getting my 30 gal set up with a ugf & power heads not too worried about the
plant's growing through it cause that's what plant's do to feed from which is o.k
I just did my 75 gal the same way but with air lines & have 2- 100 gph hang on backs
I can say that it keeps the tank nice & crispy clean & the plants are growing better.

What do you do next? It seems like the little tube at the top of each tower would need to be connected to a pump, but there is only one spot on the pump to attach tubing.

You will have to buy an air pump that comes with 2 outlets. The one he uses has 2 if you watch at 2:22. He may have just set up one airline tube for an example.

    So it's a bubbler not a filter?

They are still filters, the just use the force of air to filter water through a biological filtration method vs chemical filtrations uses things like Carbon to bind organic materials. Biological filtration works by converting organic substances to a safe for of Nitrogen which can then be removed via water changes.
