Baking bread on the wood stove Can we do it ?

  • Our attempt to bake bread on top of a wood stove. Recipe:
    White Bread
    1 package of yeast (instant)
    2 ¼ cups warm water 110 to 115 degrees
    3 tablespoons sugar
    1 tablespoon salt
    2 tablespoons oil
    6 cups all purpose flour
    Dissolve yeast in war water. Add sugar, salt, oil, and 3 cups of flour. Beat until smooth. Stir in remaining flour to form soft dough.
    Knead on floured surface 8 to 10 minutes. Place in greased bowl. Flip to grease all around dough. Cover, let rise 2 hours or until doubled in size.
    Punch down. Turn on floured surface. Cut in two pieces. Shape into loaves. Place in greased loaf pans. Let rise 1 hour or so. Bake 375 degrees for 35 minutes. Test with a cake tester or toothpick. Cool on a wire rack

    Thanks so much, I started to bake bread in my wood stove. It’s an experiment at this time as we live on a large wood lot - and cooking with wood makes so much more sense.

    Hi:-) To get some brown colour on the brad in the dutch oven, just "wash" the top of the bread with some water with a drop sirup before you cook it . All the best from Norway :-)

    Great video on cooking on top of the wood burning stove. I have tried this method both on my wood stove and outside on my propane 3 burner camp chef stove. Next time I plan to place fire bricks on top of the Dutch oven to see if that will help to brown the top of the loaf of bread. Thanks for all you do and for sharing with us. God bless, Debi

      I'm trying to learn how to bake on top of a wood stove. Have you ever tried a camp stove (with the legs) on top of one? I'm wondering if that would work. Did you ever try to make bread like the video?

    I've never made bread but want to learn. I had to like your video when I saw that you used a frozen, old pillow case as a "kneading cloth." I love it, lol.

    That looks yummy! There's nothing like fresh baked bread. I don't know if you have any non enameled cast iron or not, but if you have a plain iron dutch oven with a flat lid or, even better if it has a lip around it, you can get get good results browning the bread in one of those. If you take some of the hot coals (not a huge pile of them) and put them around on the lid the heat will get to the bread from the top as well and allow it to brown for you. You could also use an iron chicken fryer for the bottom of the oven with a skillet turned over on top of it as a lid. Having the heat on the top makes a big difference. This is how we do it when camping.

    Everything is always so good cooked on a wood stove! Can't wait till cooler weather so I can start cooking with mine. Going to try your bread recipe.

    Thank you for the video, we were just talking about trying this on a propane grill, I didn't think about using a dutch oven but that would be like an oven itself.

    Wanda if you wanted to make sour dough bread just use 1 cup water and 1cup sour dough starter, turn the bread over for a few min in the wood stove to brown top, also heat up the top of pot before baking bread so it's as hot as pot

    I loved this video. I have a question….If you use a small Dutch oven and get your wood stove to 450 degrees, why couldn’t you put your Dutch oven inside where the wood is and turn is sideways half way through to keep from burning the bread. Wouldn’t that be like making bread in a wood fired oven outside? Have you ever tried that?

    Inside your dish use one of those grill matts
    I’ve never looked back and NEVER have brown bottoms on ANYTHING! I even cook bacon on a mat, on a cookie sheet! Wipes off clean!

    How about a piece of aluminum foil (shiny side toward bread) in the lid. It may reflect enough heat down to brown the top.

      Thanks for the tip. I didn't think of that. We will see if that works next time. May have to use the rocket stove outside this time of year, though. Too hot for the wood heater.

    Maybe I missed this, but it would have been so nice if you had taken the temp of both the top of the wood stove and also the dutch oven while you were baking it. I know it's not an exact science, but when you are total newbie to this, you have NO idea how hot to get the stove. Ours runs about 300 degrees on the top of the stove and at that temp I can only get about a 230 degree reading on my dutch oven (cooking beans). I have a feeling the wood stove top has to be hotter than the temp you want to ideally bake the product at.

    looks good. just wondering how long was it on the wood stove baking. and as for the fire was it a roaring fire or a more of a slow smoldering.

    I have a recipe that is very similar but I can never get the bread to rise while cooking. The dough will rise perfectly before cooking but when I try to cook it, it seems to go flat. Any tips on how to fix that?

      +Hazar Yesna It could be a couple of things as dough rises it releases gasses it might be forming a dry layer on top of the bread which will prevent it from rising in the oven. Try putting a light coating of oil on top of the bread if this is the case. You might try slicing marks in the top of the bread to release the gases while cooking. The other thing is the bread may be getting to hot to early forming a crust on it to quick before it has a chance to rise in the oven.
