Ultra HD and Full HD (FHD) are good options! Having a touch screen on your laptop won't have any significant advantage. I'd say save some money and go for a non touch version. If you are getting a touch version in a cheaper price, then it is a good deal!

Ryzen 5, I'd assume they are 3500? Usually around 256 GB SSD? they are okay too for small to medium level data sets but during your Thesis period, they might impact you with speed. Try and go with a 16GB laptop.

Hello - do you mean 1TB HDD AND 256 SDD? This should be fine as long as it is over 512 GB (at least). What is the clocking speed? You might have to run some softwares that would need descent clocking speed.
