If a vegetable is cooked in a way the Biryani is cooked like marinating the vegetables first, putting all the biryani spices, layering vegetables and rice while cooking, using kewda water then why wouldn’t be this called a Biryani. On the other hand Pulao is cooked in a totally different way. It is cooked like the way vegetables are generally cooked. So a vegetable Biryani can never be called a Pulao.

My recommendations for Biryani in Mumbai: Cafe Noorani for their Chicken Tikka Biryani Lucky Restaurant at Bandra West Delhi Durbar at Colaba I think the best biryanis in Mumbai are still done by home chefs who put in a lot of work, time and let the process happen step-by-step. I'm sure you will be officially "Team Vegetarian". Have breakfast at Manis Lunch Home in Chembur (Name is contradicting the time of food, but you should try their lunch as well, if you've got time). Another breakfast option is to have "Misal Pav" at Mamledar Misal, either in Dadar or Chembur. Have lunch at Sadguru Veg Diet (Cubic Mall) Chembur - Make sure to have their Pav Bhaaji and Roti & Paneer Lazeez. If you have their lassi as well, a teardrop will roll down your eyes with happiness. For snacks, search "Onion Bajji and Pazha bajji". If possible, try to get "Pazhampori". For dinner, come back to Manis and have their "Ela Sadhya". And after all this, if you still have space in your stomach, go for Baba Falooda. Also, thanks to Akshay for convincing you to have Vegetarian Biryani. And it is different from Pulav, as Pulav is usually on the sweeter side as compared to a Veg Biryani. Just a suggestion: for non-veg you should go to Kerala House in Vashi, Navi Mumbai and have their Non-veg sadhya. I've been eating at Shalimar since childhood (Stopped going there since a few years cause it's far) and I can say with guarantee that we make better biryani at home, and it's just flavorful. I wish I could meet you in Mumbai and that veg Biryani = Pulav thing is very true. Ramadan Mubarak

As a Muslim South african originally from Durban I can assure you that Durban biryani is truly unique and the most delicious. Now residing in cape town I can also tell you that cape malay biryani is also truly authentic n beautiful spiced. Please visit us in South Africa akhi. I bet you never heard of biryani frim the tip of Africa. Come taste the flavours of South Africa 🇿🇦 😋
@Khalid bhai, you should do a vegetarian food video in Mumbai, where you have only Veg food in the entire day. Mumbai has got great places, and if you're game, we should go for South Indian food. I'm sure you will be officially "Team Vegetarian".
Have breakfast at Manis Lunch Home in Chembur (Name is contradicting the time of food, but you should try their lunch as well, if you've got time).
Another breakfast option is to have "Misal Pav" at Mamledar Misal, either in Dadar or Chembur.
Have lunch at Sadguru Veg Diet (Cubic Mall) Chembur - Make sure to have their Pav Bhaaji and Roti & Paneer Lazeez. If you have their lassi as well, a teardrop will roll down your eyes with happiness.
For snacks, search "Onion Bajji and Pazha bajji". If possible, try to get "Pazhampori".
For dinner, come back to Manis and have their "Ela Sadhya".
And after all this, if you still have space in your stomach, go for Baba Falooda.
Also, thanks to Akshay for convincing you to have Vegetarian Biryani. And it is different from Pulav, as Pulav is usually on the sweeter side as compared to a Veg Biryani.
Just a suggestion: for non-veg you should go to Kerala House in Vashi, Navi Mumbai and have their Non-veg sadhya. The waiting time is crazyyy, but once you get in, as my non-veg eating friends would say "it is not less than heaven".

The processes and ingredients are very different and even the taste. Veg biryani is a good option for vegetarians who dont consume meat. Thats the simple purpose of veg biryani.
