basic tinola -saute thin sliced ginger until you can smell the aroma, add sliced onion and garlic, saute for few minutes. Add cuts of chicken, saute until it turns a little brown, add chicken stock or water and let it boil, add fish sauce, ground black pepper, chicken cubes to taste. add sliced papaya or sliced sayote and lemongrass (optional) and malunggay leaves. let it boil until the papaya is cooked. Serve with steamed white rice with spicy fish sauce dip. (patis, calamansi, red pepper)

Mommy won, some tips for next time cooking Tinola.
    - Cut the chicken into parts and saute with garlic and onions and ginger. Season with salt and pepper and fish sauce (patis)
-once chicken is brown, add water, chicken cubes and chayote and lemongrass and bring it to a boil.
    - Season more salt and pepper according to your taste
-once chayote is soft, add malunggay and other greens
Lots of ginger will be good for Daddy Won that he is sick. My kids call it the “magic soup”. 😄

As long you have all the ingredients, they will taste good. if there's no papaya, there's another you can use like chayote. Tomatoes are optional will add color and a little flavor. Although there's lots of different way how you cook tinola but you guys did great for first time. There's a reason why the beginning you have to stir fry the chicken and turn them brown it's because it removes the blood of the meat.

The correct way to cook tinola is to saute garlic, onion and ginger. When it's sauteed properly, add the chicken, saute with the ingredients, then add the broth when it's boiling, add lemongrass and vegetables like papaya or sayote and chili leaf season with salt. 😊

Great Video!! My mom is from Bulacan region of the Philippines. The way she does Chicken Tinola as she was taught by my grand mother is to fry the garlic, ginger and onion together for a few minutes then she adds the slices of chicken parts like legs, wings and breast. Then my mom will add a bit of Fish sauce and black pepper as she stir fry the chicken until light brown. (Optional: my mom also add chicken liver) Once the chicken is lightly brown, my mom will then add water till the chicken parts are fully submerged. She’ll bring it down to a simmer and let it simmer for 30 minutes. She then add the pepper leaves, spinach or moringa and Green Papaya or Chayote or Upo(White Squash) and let it simmer for another 10 minutes. You can add more Fish Sauce to adjust saltiness. The way we eat Tinola is that in a bowl , we put rice and pour the Tinola soup over the rice with the chicken and vegetable. I like mine very soupy so, I add more Tinola soup to my bowl of rice. To adjust the saltiness we would add fish sauce to our bowl of Tinola. Also, since, me and my brother don’t like biting into the slices of ginger in the Tinola, my mom will grate the ginger before frying it with the garlic and onion. Lastly, when my mom cooks Tinola she always gives me and my brother a ripe banana to eat with the Tinola. The contrasting flavour of the saltiness of the Tinola and the sweetness of the banana just enhances the flavour of the Tinola.

In NCR , if you say tinola, it refers to chicken saute in garlic, onion, ginger, chili and soup with malunggay leaves or chili leaves. But in Visayas if you say tinola it refers in soup with tomatoes, ginger or lemon grass, onion, different kind of fish available in there place. They just boil it.

Ants are everywhere even here in the Southeastern United States! Fortunately, they're not the type that bites! BTW, I like to add fish sauce when I cook Tinola.

Two ways to cook tinola. Either you saute or direct. Especially native chicken you don't need to saute. 30 days old chicken needs to saute to get a good flavor. Doesn't need much about lemon grass. But for native chicken it is best to add lemon grass. Just make it simple. Do NOT use TAMARIND. Watch tinolang bisaya in youtube.

Why did you put the vegetables together it will overcook hahaha…
Next time cut the chicken into pieces, heat the pan, then put a little oil tyen add the ginger (yes ginger first) then garlic then onion after that put the chicken..
Cover the pan for about 10 to 15 minutes then add paminta (I forgot how to say it in English) add fish sauce then add water and lemon grass..boiled it until the chicken become soft and tender add magic sarap and salt then put the papaya or sayote whatever you like cover until it soft then lastly is the malunggay then tirn it off so the the green vegetables will not over cooked 😊..
Btw i love all your videos ❤
