    I used to cut meat in a processing beef plant. I always learn something from your videos wether it is food prep,cooking or what ever you put on. I've been around a while & live in South Florida so I grill year round. Just wanted to thank you for sharing your wisdom. THANKS 😊

    The definitive video on sharpening. Thanks, Harry. Bought the Dick honing unit. Dug out my 30 year old Lansky system. It only had a shallow angle of 17 degrees and 3 stones, but went with that on my trimmer. Finished on the Messermeiser ceramic straightener. Feels pretty sharp. Thanks again.

    My sharpening box tools are VERY similar to yours. I have a Ken Onion Work Sharp system but not a electric grinder being the difference. Looking forward to your forthcoming stone video. Looking forward to your Stone video. I believe the most misunderstood gear is the Steel (ceramic or steel it doesn't matter) but you laid down basics. Glad you honed in on the built in guide on the steels. Great detail Harry. Again kudo to you.

      Looking forward to it. I've been honing my knives since 1978 and I wish I could say that's it all technique but frankly I do thing their is a lot of art to it. I'd like to use my Shapton Glass stones (up to 16,000 grit) for my meat cutting knives but those stones are reserved for my straight razors. Having a perfecting flat stone is key to getting a great edge on a razor. Anyway I'll be watching and learning. Thanks for all the time you put into educating your viewers.

    Harry, very impressive. I'm sure I mentioned to you that I'm a Eagle scout so I do know a few things about maintaining a very sharp edge. And yet I did learn some things from you on this vid,well dine. And I do personally prefer wet stones. A d a good steel during heavy use.🔪

      Harry Soo Thats very good. I actually think hearing this info from you who are a user and sharpen out of need is way better than hearing it from someone who is a knife specialist. So i for one would appreciate more videos about knives, but i am not picky, i enjoy watching everything you produce :)

    What a great video Harry I really mean it. I struggle keeping my knives sharp, I have a wet stone but I just can't seem to hold the correct angle, I do it a few times and it feels really good, then I do the other side and it seems to screw up the side I already did. So I bought an electric one, and that works "better," but I guess I just need to practice on it more. You'd think after 30 years cooking, I'd be able to sharpen a freakin knife lol. Thanks again. oh btw, I'm a big fan of honing rods. ; - )

    Great post...learning how to use stones, slowly. Can the blades/stones on the Trizor XV be changed out, or do they ever need to be changed?

      Not sure if you can change the grinding wheels. I think they last a long long time. My XV is several years old and still works fine.

    I just bought the Dick Rapid Steel. I didnt feel like it did much but maybe i need to give it a better try. Ive been using that same electric one. Feel like i need to sharpen every weekend with it though. I had them professional done once this summer and it was night and day difference compared to what im doing. Im gonna try and use the electric slower like in the video and see if that helps. Thanks

      I use my electric to get the blade into the right angle or if the blade is super dull. Then I do whetstone 3000 grit and use F.Dick to steel it.

      sure. be aware it will coagulate if your meat is very cold.

    Hey Harry: This is Tommy again, How are you? I have a question. the F. Dick sharpener, what angle does it hone at? I have all my knives cut at 20 degrees.

      F. Dick is a German company so I would guess it is 18-20 degrees which is customary for knives from that part of the world versus the 12-15 for Japanese knives. I don't use my Rapid Steel on my Japanese knives

    I am spoiled. I actually live close enough to the Dexter knife factory that I can bring my knifes to them and have them re sharpened at the factory. They get $1.00 per knife. Nothing better than a factory edge.

      $1.00 is a good deal IMHO even if it is 90% sharp. Dexter knives are affordable so you can buy two sets and keep one set at the factory to be sharpened.

    Hey Harry I had a question about the dicks rapid steel I'm currently using a razor edge steel for work. I work in a meat factory and it comes in really handy. But when I used the dicks rapid steel it ruined the edge on 3 of my knives. I use scimitar knives a lot just like the knife you had in your video while you were showing us your stones. Do you know if there's a way to loosen the springs because I feel like they're way to tight.

      Hey Josue, I have about 4 Rapid Steels and one does not work so good because the sharpening tines are not aligned properly. I was too lazy to send it back. My other three work perfectly and I use them all the time because I'm it's too much effort to take out and setup up my Naniwa Chosera whetstones. When I need a quick sharpening task, I goto my Rapid Steel as they are super fast and convenient.
