    I made this gravy and even without the turkey drippings and using the fat catcher, this gravy was delicious! He’s right! This recipe could be a meal it’s so good!!

    Thank you for this recipe My mom made giblet gravy all her life for our family at Thanksgiving As she got up in years I took oever making all the Thanksgiving dinners for her and continued making the giblet gravy also, This will be my 6th year with her as she will is now spending all her Thanksgivings in heaven. I am trying your giblet recipe this year I have it on the stove tight now I always cook ahead and freeze everything so not so hard on this old lady on Thanksgiving day. My kitchen smells scrumptious. Can't wait to try it.

    I Cook the giblets for over 2hrs on a very low simmer and my husband loves it that way with all the added veggies & herbs I have on hand. I buy chicken gizzards separately for him to eat the same way since the turkey giblets are for the gravy. I never add salt and use equal parts low sodium stock/water/wine to cook in.

    This is so yummy. I am 67 and cook for hubby and myself. i cook early and freeze in smaller portions so we can enjoy several times after Thanksgiving. I made this exactly as directed and the flavor is unbeatable! Delicious by itself, on my oyster dressing and mashed potatoes as wekk as they turkey thighs I made along with this. Such deep rich flavors, you will not be dissapointed

    The eggs originally came from the undeveloped ones in the turkey taken as it was being cleaned. I recall them from great grandmother's gravy.

    I've always heard of giblet gravy but never seen it made before...looks easy and you actually use all the pieces of the turkey haha My mom use to put all the pieces in the stuffing to flavor it. I like it in the gravy much better. Looks so perfect when you finish!

    I have always make great Turkey gravy! But,you took it to another level. I simmer my neck ,liver ,gizzard,heart with onion,but !I use potato water, pan drippings.I like the idea of cream,and adding carrots,onions,garlic below Turkey while cooking! Thanks for the tips! Not sure about the eggs though.

    I remember my dad making gravy like this with the neck and the giblets Etc. I loved you using heavy whipping cream. The only thing that puzzles me is the egg? Where does that come from I've never heard of that before? Also you speak so calmly, you're easy-to-follow and I really enjoy your voice! Great job!

    Thanks for showing how to boil and cut up the giblets to add texture and taste to my home made gravy. I used water (not broth) and didn't add the heavy cream, I also added fresh cut mushrooms. Overall it came out very nice and all liked it.

    removing the fat from the gravy is the mistake... fat in the gravy adds flavor with out it its bland....

    I make one very similar but I deglaze with a white wine. Also, I have never heard of the eggs being in there before. Maybe because my parents were New Jersey and Pittsburgers.

      The hardboiled eggs will slightly help with thickening the gravy and add some texture alongside the gizzard heart liver and neck meat.

    To make this gravy thicker, do you just use more butter and flower or reduce it longer?

I've been making lemon, pepper, cream sauce with a chicken broth base for a couple months now and serving it over chicken or salmon and sometimes it's just not thick enough. I cook it down but the chicken gets cold before it's thick enough. I think a beurre manie will do the trick.

    My method -- first remove most of the fat from the pan using a baster, then, into the pan of drippings, add 2-4 cups vegetable water (from cooking potatoes, etc.) deglaze on low heat, then add 2 cups wine, continue on low, then add seasonings, then mix 3+ tablespoons cornstarch into 2 cups cold heavy cream and add to the pan, stirring until thickened.

      PS. The giblets taste better if roasted in the pan. I omit the liver altogether, as it overpowers the gravy. Instead, poach the liver in cream, then mash together, add diced green onions, season, and make into sandwiches, using hot buttered toast. Otherwise, pets or seagulls love raw liver.

      You can simmer a little more stock with the giblets. You could also put the fried Turkey wings in as well to add flavor. If your turkey fryer has a drip tray then you can also remove the fat from the tray and put those dripping into the stock to add flavor. Let me know how your gravy turns out 👍
