And of course the beautiful lacy cable down the back. I wonder if it makes a difference if you start saddle shoulder rounds from mid-back or the edge of the shoulder. It seems some patterns require the starting point to be at the shoulder and you have to move stitches from mid-back to the shoulder onto the right needle.

I like the symmetry of starting in the middle but it’s not essential.
