BEST PICKLED PIKE EVER (Recipe #1)

    Items needed:
    Bite-sized Pieces of Fish (Pike)
    Water
    Canning Salt
    Vinegar
    Sweet White Wine
    White Sugar
    Whole Large Onions
    Full Lemons
    Whole Cloves
    Allspice
    Mustard Seed
    Whole Black Pepper Corn
    Cheesecloth
    Canning Jars w/ Lids
    Good Food Safe Bucket
    Medium Stockpot
    Recipe:
    1. Cut pike into bite size pieces.
    2. Rinse and put into food safe bucket.
    3. Mix cold water and canning salt till fully dissolved, pour over fish. Let fish sit for at least 2 days, stirring at least once each day.
    4. Pour fish out into colander and rinse off salt with tap water.
    5. Put fish back into bucket and pour vinegar over until fully covered. Let fish sit for at least 2 more days, stirring at least once a day.
    6. Wash your mason jars and lids with soap and water
    7. Mix a 1:1 ratio of sugar and vinegar in stockpot, warm until fully dissolved
    8. Cut cheese cloth into squares 6” x 6”
    9. Load cheese cloth with cloves, allspice, mustard seed, and pepper corn. Tie up and throw into warm sugar/vinegar mixture. Let sit while you prepare the rest.
    10. Cut onion and lemon into slices about 1/4” thick.
    11. Layer onion, lemon, and fish 3 times in each jar. Make sure to put your spice bag in the middle of your jar while layering.
    12. Pour your sweet white wine into each jar. (We used about 1/3 cup)
    13. Fill your jar with the sugar/vinegar mixture to the top.
    14. Shake each jar, and let sit for at least 2 weeks.
    15. Open and enjoy whenever! 😜
