Hair reminds yourself of death. When you grow older, your beard turns white, reminding you of your death that is inevitable

So basically, he's telling the person who asked, that he's intelligent and sensitive because of having a beard and the person isn't. Nice humility! Maybe it's intelligent and also sensitive not to be humble? Anyway, he starts with the belief that the creator is perfect and that every design he made was perfect and coherent for all ages of the human existence/history. Wrong. Both thoughts are wrong.
First, the creators are/were humans, so they were imperfect and therefore the design has flaws (that's why people get cancer and other illnesses even as babies, because the creator is/was imperfect and therefore the design was/is imperfect, both the design and the architecture of the body including the brain are.
The second wrong thought is believing that the original design is valid or worth for all ages of history and environments. But he didn't give any specific physical or scientific reason why the beard may be a necessary or useful design. I will give them now, and that's why he's wrong.
In physical terms, the beard purpose could have been explained as a design for, just like the rest of the hair, for some sort of temperature maintenance in winter when the primitive human was living in the open. Wrong. Why? Because the woman doesn't have it. If the purpose had been this one, the woman would also have hair all around the body, including the face like men. Then women are revealing that the purpose was not this one or any relating to environmental reasons. Therefore, the only reason is probably contained into two possibilities, 1/Mating and 2/Age information.
The first one, mating, is related to the possibility that the human creators did this as a weighed variable inside the mating protocol of the human being. Just like birds do some rituals to mate, both the male and female, and in fact, all species do. So there you go. Sadly, women feel attracted to a male who has a beard (not the one that Sadhguru has, but I will explain it why later in the second point).
The second one is for age information of the human being. In nature, there are no IDs. Therefore, one can't check the age of a human by looking into a database. Therefore, the creators created the bleaching hair and beard in order to give information to others (both humans and surveillant creators) about the age of the human being that has it. Women also have bleaching hair, so it makes sense. Therefore, Sadhguru is giving info about his age and health status. Therefore, this thinking is all except intelligent.
Outside the basic reasons now we could reason about the comfort of wearing a long and huge beard. It is not comfortable at all. It makes you really uncomfortable because it occupies an unneeded space and also it produces discomfort because of the constant touch against your own body, clothes, surfaces, objects, or even with other humans if that's the case. So, again, a not intelligent decision at all. Even the sensitivity, term that Sadhguru also refers as a result of wearing a beard because of not worrying about it, gets reduced, since you can't feel your skin or the touch in it because of the hair.
Now, the only true reason why gurus wear the beard is because they want or they need to show that they are old and that they are wise. Wise men are usually referred as long bearded men (probably because of their focus in other stuff rather than looks except for the fact that it doesn't take time at all to cut the beard if you have a machine, it's like 2 mins, at it increases your comfort, sensitivity, well-being in general, info about your age etc), therefore since his selling point is his wisdom and old age, he must keep on that idea and therefore appearance.
That's all. Hope you understood all that I said, and by the way, if you like the selling points of Sadhguru, which is stuff related to meditation, it is a very good idea that you cut your beard too: it will give you more comfort and relax on your meditations, specially in spring, summer, and autumn when temperatures rise. That's why Buddhists, which are much more wise and are many steps ahead into meditation practices, rip off all kinds of hair. Makes sense. It is of no use and it bothers concentration and well-being. Cheers!

Nails has its own purpose. Some yogis will not cut nails for long long time to contain energy. Guruji not cutting nails is not practical however not cutting facial hair is.
