  • How to make Mead --Froot Loops Mead! What? That's right, we are showing you how to make Mead that tastes like Froot Loops! I remember this cereal as a kid, and this mead should bring back some memories, and maybe make some go away...
    There's a secret ingredient.
    There's also another secret to this video, it's the first of it's kind on our channel!
    *** It took me a few days to get this video edited and uploaded. Four to be exact. It started fermenting on day 3, but on day 4 it seems to really be starting to look like an active ferment.
    Some things you might need:
    Fresh Lemongrass, about 5 1/2 ounces by weight
    Water. non-chlorinated please
    Honey, we used local, but if you don't have access: amzn.to/2xXCAm7
    Strainers: amzn.to/2xBQ7An
    Airlocks! amzn.to/2xPNNVG
    One Gallon Glass Wide Mouth Carboy with lid and airlocks: amzn.to/2xRj9Ll
    Derica's T-Shirt: amzn.to/2Igq5H1
    How to do it:
    Make a tea by boiling the lemon grass and water for 10 minutes, then letting it steep for 15 more minutes.
    Strain tea into cool water. Wait until this mixture is below 110f.
    Add 2 1/2 pounds of honey to the fermenter.
    Add water/tea mixture.
    Shake vigorously to combine.
    Use a magic stick if you have one, if not, see link below!
    Add lid and airlock, store in a cool dark place for 4-6 weeks.
    If you don't see any activity after 7-8 days, add some commercially available yeast to start a fermentation.

      Seems to be a few Floridians here, even 'ex pats' - I'm also an ex Largo-ite and 1975 Largo High graduate. But through the machinations of the Universe, I'm now in Arlington, TX. A new mead maker, I have two years of making Joe's Ancient orange spice mead, mainly for Christmas, and I'm now wanting to branch out with some melomels and maybe even this lemon grass mead. Can't say that "it tastes like Froot Loops!" is particularly enticing, but I just gotta see if it's true... lol

    I've also heard of magic "logs" it's like the magic stick and is meant to carry yeast strains from wild ferment to wild ferment, but instead of a mixing stick it's basically just a piece of wood you leave in the fermenter and it just sits there through the entire ferment, before moving it to a new one.

    Hello, I have never been much of a " drinker" , but as of lately , past few years, have been enjoying a few different whiskeys, rums, and beers. Some have been a little to harsh, but good flavor blah, blah, blah, etc. Long story short, I was always looking for "something" but didn't know what... until yesterday!
    The wifey and I went to a local "vintage and vino" here in town. A local brewer of Mead had a stand there, and giving free samples. I had, at last found that "something" !!!! I still don't know what it is, but 2 of there flavors made it home with me.
    Now, being moderately OCD, I have got to try and make some. I just wanted to thank you for your videos, specifically the list above, I LOVE FRUIT LOOPS , so I will be trying this. Thanks again, B.

    Well, now I understand why I do not get notifications anymore on channels I am not really interested in anymore, yet still subscribed. The algorithm knows me better than I know myself.
    I also now know that I started all those concoctions I mentioned in a very wordy way with just the wild yeast. I thought I was making jam, so I boiled the grapes to make the juice. It sat in the refrigerator for a week, then I decided to make vinegar, so they started out 2 open 1 gallon mason jars. With cloth covering. Then I picked more grapes and juiced them and added sugar and added the must. Still planning to make vinegar.

    I just realized, after forgetting 8 bottles in the pantry, that this video is the one that inspired my honeysuckle mead. Brewed for 5 months & forgot in bottles for 11 more months. Ended up pretty tastey. More hydromel-like, but nice. Might of got a coworker friend into brewing because of it too.

    TLDR; Drill holes in your magic stick!
    You guys are great at teaching interesting things, and now I'm going to teach you some (hopefully) interesting history from Norway!
    Magic stick, also called yeast stick / yeast wreath. In Norwegian, kveikstokk (gjærstokk) / kveikkrans (gjærkrans). The normal brew, were farmhouse ale. All the farms around in Norway had their own brewing culture, and with it, their own wild yeast. It is said, that if the yeast had gone bad, they could run over to the next farm, and borrow some of their yeast. When going home over the mountains, it was important to NOT stop, and walk with a even / steady pace, so that the yeast was not disturbed. Not even for a pee! When the brew finished, they put these yeast sticks into the cake, and the yeast would hang on to it, for it to be transferred to a new brew, or hung up to dry. Wooden sticks had a lot of holes in them, to get more of the yeast to sit on it. The yeast wreath was constructed in a way to gather a lot of yeast.
    Here are some pictures:

    Tip: if you use a syringe or a turkey baster you can suck the frothy bubbles off the top of your SG measuring cylinder making it a hell of a lot easier to read the SG.

      I should do this. I always forget the turkey baster I purchased just for this purpose when doing a video.

    Just a thought you might get more flavors out of your tea by using a French Press. Great video

    • @CitySteadingBrews
      @CitySteadingBrews  5 ปีที่แล้ว

      I'm not sure how a FrenchPress gives more flavors here. It's the same thing, just using a vessel to hold everything with a built in filter. Steeping and pouring through a sieve is the same idea really.

    First time seeing a youtuber do a wild yeast mead, really interested to see how this turns out! Heard it can be the best you've ever tasted or the worst lol good luck to this ferment! Keep up the good videos guys, love the channel.

    • @CitySteadingBrews
      @CitySteadingBrews  6 ปีที่แล้ว

      It's started, so it's working at least. Also, wild yeast in honey normally comes out good, it's wild yeast collected from other sources that can be... unique at times.

I am fascinated by all of your mead videos because I like creating things and working with my hands. Your self deprecating humor is brilliant and I am an instant fan of anyone who wears a Star Wars shirt! Happy Holidays and continued success to you both! Brian, have you ever tried to make a Brochet? Or perhaps a Braggot of some sort??? Was something I was thinking about for my next batch, experiment between the two somehow
    Also I was wondering where would be the best place to source some smoked oak spirals? Was contemplating using some for the spiced batch of this mead I'm currently brewing up

    • @CitySteadingBrews
      @CitySteadingBrews  6 ปีที่แล้ว

      Bochet. Nope, but I keep threatening to!
      Made a braggot, off camera. It's awesome.
      I have links to the oak spirals in the flavoring mead video, but here's links: amzn.to/2zw9MD0

  • @ajohnson153
    @ajohnson153 5 ปีที่แล้ว

    From my very limited understanding of the properties of honey and wild ferments I would think that honey would be the ideal vehicle to experiment with wild ferments. It has natural antibacterial properties which would mean that any wild yeasts wouldn't have any bacteria to out-compete so you don't have to worry about a bad bacteria infecting your mead. It's like wild fermenting with training wheels!

  • @Nurgis
    @Nurgis 6 ปีที่แล้ว

    The Rune stick is in Fuþark lettering and it actually says "Auja". Now that doesn't really mean anything in the Icelandic language or "Old Norse" as I know of but if the third letter were slightly different it may have spelled "Ausa" which means ladle. But the stick is still cool. ;)

    • @CitySteadingBrews
      @CitySteadingBrews  6 ปีที่แล้ว

    • @Nurgis
      @Nurgis 6 ปีที่แล้ว

      @@CitySteadingBrewsI'm no expert though. I'm just an Icelandic person with a nerdy fascination with the lettering and viking stuff. It migt be a spellword or something I haven't heard of.

  • @DoctorRob13

    I must compliment you on your nice stick. I’ll have to look into maybe getting one myself. Btw, I’m a week into my first ever batch of mead. I’ve made two separate gallons, with two different kinds of honey. I was curious about how the different honeys would taste after being turned into mead. So far, I’ve noticed that one is slightly darker then the other, and it also had a slightly higher OG. I’m so excited to see how they turn out.
