The only thing that annoys about these stars is that you often can't do them on the first mission of the level, because i wanna get rid of them in the first try.
It's actually possible to get 100 coins without the Wingcap. On the floating island, you can do a sideflip groundpound to grab the nearest coinring. Then just scour the rest of the level. Of course it is easier with the wingcap. And I tend to come back after getting the wingcap regardless.
