Nearly evrything in real world is velocity, we don't have to really mention it, instead we have to mention speed because it has definite directions, no directions doesn't mean 0 directions When you use a bicycle, the direction in you are going can be either displacement or distance, but we tend to use displacement more, if you want to go to another city, you won't cover the whole world in the opposite direction, we try to cover in shortest distance possible

Because acceleration is change in velocity/time taken; m/s/s ;m/s^2 And when denominator comes to numerator it changes into negative sign So it is written as m s^-2
