should have tasted that cheese with some blaand.... my 2nd batch of that is almost clear now, after about 3 months thanks for this, i have less apprehension of opening older vac packed cheeses now. i have a couple approaching 2 years, so thanks for that again. my raw milk cheeses have been generally more flavorful, making 7.50 usd per gallon worth it just too cool to see that no aged cheese ends up bad
The price has been stopping me. Im not really a gourmet so a lot of the subtlety would be lost on me. If you put them side by side I can probably taste it. But one by one, I dont have the best palate.
You're talking about adding a smoked flavour by smoking, but i was thinking about using a chipotle. Since it's a smoked pepper it could impart some of that flavour as well. They also tend to have a slight sweet flavour to them too. I'm not a cheese maker but it seems like that could be really good.
Really good to see the raw milk cheddar tasted as I couldn't find the original tasting video. I always use raw milk direct from my local dairy (not cold pressed though). That's the next cheese on my "to make" list...
Gavin, I live in Oregon and if I can find some fresh oregon truffles, is there a way I can send them to you? I'd love for you to experience oregon truffles and use them in a cheese.

Gavin! My first cheese was cut with lime juice and a bit of apple cider vinegar. It is creamy 24 hours later even after hanging to drain the whey. Is that normal? It taste really good, but you can spread it and I wanted to crumble it. 🤷 Edit: that jalapeño cheddar sounds superb!

If you ever get the chance, try making the Saffron infused cheese with sheep milk. Better than made with cow milk.

What blows my mind is how people discovered you could eat cheese that is so old, and that it stays edible for so long.
I think all those cheeses would cold smoke very well, especially with an applewood.
Gavin can you reseal cheese or do you have to consume it once vacuum pack is opened?
I cut a little off each one, then re-vac packed the rest and put it back into the cheese fridge.
My family can't wait 10 days before my cheese will be ready to eat.. . But 5 years... Impossible!)
