Ah, que de souvenirs de ma jeunessse passée à Mulhouse. Je me rappelerai toujours les croustillons hollandais, les beignets aux pommes. Que c'était tellement bon. Vers la fin, le prix des manège était tellement élevé que je n'allais à la foire-kermesse de Mulhouse que pour la bouffe :-) Merci à tous ces artisans qui continuent la tradition du travail bien fait. Considering that France highly appreciates the culinary arts and even has schools that are way too good (thus why many chefs move to France to study there), it wouldn't be a surprise for one to ask why it's underappreciated. For most who doesn't appreciate it, they see a candymaker and just wants their kids to have a go with it and be happy. There are many in the world as passionate as them, but none take the moment to stop and think to appreciate the joy of the moment they bring to everyone
I dunno about you guys but when I see fresh hot/cold handmade things being made by real genuinely happy people with fresh ingredients, oh man does that turn my appetite/sweet tooth on. Gotta find this place when I take a trip to France!
This is so underappreciated... Look at their faces, they are so happy and passionate! It's so genuine, I feel so much joy just look at them. It's like a work of art... and France has always been the utopia for everything cuisine and edible. If I had the chance, I'd walk up to everyone in that clip and show my admiration for them. They are so passionate... that I wish I had some of that in me...
In my country we call it "smenävar" which roughly means smiths-hands. Some people with smiths-hands can pretty much pull a baking tray fresh from the oven with their bare hands without any apparent harm caused.

Wow, I make hard candy similar to this for a hobby, but just thinking of touching the stuff with my bare hands that early makes my palms hurt - I always use gloves when molding and pulling the sugar mass. That stuff is probably around 150+ degrees celcius when poured on the table. They must have leather for skin :D Looks amazing.
When you make candy, you MUST tolerate the boiling temperatures and drop it just before physical damage. Pastry Chef's, such as myself, have all burned ourselves sufficiently to literally BURN it into memory. The answer to your question is, "One time per batch. One long burn." Hope that helps! lol

If they wear gloves it will contaminate the food with chemicals that the gloves have on them not only that but it will give the candy and everything else a very plasticy chemicaly taste because of the fact that they do everything with their hands. And it is pretty much a rule that a chef must wash their hands constantly to avoid the spreadof germs. The fact they do everything with their hands is amazing because it is very tiring work.
