The funny thing about recipes is you'll find a lot of cultures have similar versions of the same thing so they could very well be a Mexican version too! :)

The cookies look to die for good, we're hosting a brunch next Saturday and these would be a perfect 'host gift'!! I love the packaging idea, very clever!! THANKS Beth!! My late Grandmother used to make brittle using Cashews instead of Peanuts that was the best I've ever had, store bought is ghastly, it was paper thin and melt in your mouth good with the Cashews adding an unexpected depth of flavor. If I had the recipe I'd share it but she was a German housewife/mother/cook/baker and all the recipes went with her when she died because she never wrote them down :(

They all looks amazing, but those palmier are a must try. I always have one when I go to "Paul", a chain of French bakeries/cafes we have here. The combination between that buttery puff pastry and the crunch form the caramelized sugar, they really are addictive :D

Elephant Ears are so good, you know that so good I know these are not good for me good. Our local Mexican bakery makes them and I always have to practice restraint with them and not get two when I am there.

Great! I liked all the ideas... The only thing Beth, is I've never used egg whites for my granola, and even made a vegan granola for someone long time ago and it turned out really delicious. I liked the results of both tries without the egg, in flavour and consistency, my question is, what difference does it make to add the egg whites? Yes it's really good! You can omit the egg but you need something to bind it together and crisp it up, I would substitute for 1/4 cup of melted coconut oil instead :) Hope that helps!
