Pretty much what PokeTy90 said. Only thing I could offer is don't worry about backlogs on things. Thousands of other content creators do the same thing, start something and don't finish it. No real big deal man. If it isn't for you, then it just isn't for you. One last thing is maybe just try playing completely new games that you would never play or never have played.
From the outside perspective, seems like you need to define why you make videos. You say what kind of videos you want to produce (ever-green) but for what purpose? If it's to be informative, that's a lot harder. If it's to be entertaining, that's doable with playthrough of new and old games. Trying to do both is nearly impossible. But I think if you sit down before doing a series and decide why you are doing it, that'll help you stay engaged. Good luck
