O H yes but it had a lower flash point and higher toxicity than ethanol and is more likely to form azeotropes during the extraction. Anhydrous ethanol is safer (less likely to flash) and less toxic than other polar solvents but will take a bit longer to evaporate
County For Questionism-Ball Yes, by about 10-1. You can reference the SDS for commercial preparations to get an idea of how the extract is blended and with what solvents. Don’t do this at home!
Looks like you did more than just "cook" those chiles. Overheating the chiles does decompose some of the capsaicin to vanillin, though I do not know the temperature rate or percentage, this can be smelled when frying chiles. For general reference limiting the oven to 300f or 150c for the majority of drying(about half the fresh weight) then reducing the temp by 75f or 30c for the last portion will prevent carmelization of the carbohydrates. Limiting temps to 150f or 65c should prevent gelatinization of most of the starches if you wish to control that variable. Proteins span a wide range but some can begin to denature at temps of 50c/120f. Fresh chiles are roughly 85% moisture by weight As a side note pure capsaicin melts around 62-65c and boils around 210-220c.
you can remove moisture using a dessicant like calcium chloride which is highly hygroscopic and pulls moisture at temperatures as low as 30 degrees celcius
I think I've found a better way to extract the capsaicin! You grind the fresh peppers up into a paste and mix the paste with an equal amount of table salt. Then, reflux with ethanol while stirring for a few hours. The salt makes the organic phase stay nice and separate from the aqueous phase, and each vesicle in the pepper can release its capsaicin better when the peppers are turned into a paste fresh. I like to pour off the mixture into a bottle and shake it vigorously a few times before returning to the heat. At the end, I pour the dark red organic phase into a fresh flask with a couple tablespoons of freshly baked anhydrous epsom salt and gently heat it for a couple hours to get rid of any water still emulsified in the mixture. Before this step, the mixture is dark but slightly cloudy with the remaining traces of the aqueous phase. After this step, the mixture is dark red and crystal clear, and a smelly white paste is left in the bottom of the flask. I haven't evaporated off the alcohol for the whole batch because I want to use it in this form, but when I did for a small amount, I got a thick red grease. It's very satisfying to see the pepper paste go from red to yellow while the alcohol turns dark red.
Two tips, Mg sulfate is only a good desiccant below 30c/85f (practically should be used much cooler) You would be better with gypsum. Just be aware it has a narrow temperature range for regenerating, too hot will permanently deactivate it, too cool won't release the moisture.

If it got hot enough to burn, it also evaporated some of the capsan. Use lowest setting on oven or use a dehydrater. When removing acetone (or alcohol), a vaccum chamber would speed up drying. Also could use a distiller and get the acetone back (or ethyl alcohol, Vodka, Everclear. Water will dry out also).
I’m making some homemade capsaicin extract for an animal deterrent, is there a reason why you chose acetone over ethanol? I’m just using everclear and a couple pounds of dried chilis, it was super cheap and readily available. I’m wondering if there was a more efficient and cheaper method but I’m just using a super cheap budget cost me about $20 this way!
If y’all want to do this I’ve learned it works better to dry them on a grill on a low setting for a few hours if you have a grill. It’s just faster and because it’s not inside in the oven it doesn’t make your house feel like it’s filled with teargas

I use a Soxhlet extractor and now and then sell a batch of mixed scorpion and ghost pepper Everclear extract on Ebay. The extractor lets you recycle the ethanol .
Years back during my misspent youth I used to do something similar with grass and ether, end product is a clear butter that I'd absorb into a pocket of rolling tobacco that when burned smelled nothing like the raw ingredient. The effect is much mellower but the fact that I could openly smoke it in the foyer before seeing a movie made up for its lack of potency.
We make tincture for tolerance building. Food grade alcohol is used, and the peppers used are rarely below ghost level heat. We also agitate for 3-6 months before filtering and evaporating by 50% before bottling
i found that if you want an extract this was a good procedure, if u want a crystal it is not. i was going to repeat with a water extraction as the red pigment should come out primarily in h20 but not the capsaicin , then repeat this procedure on water washed powder and it should be easyier to crystallise. worth a try
I would use Ethanol in stead of acetone. That has the Advantage, that you can use it maybe for cooking. But do not use spiritus you would taste it. Maybe you get a rum with 80% or something.

+Drew Goslin Everclear is only 70% alcohol. You'd have better results if you found something that was 95%, like Graves. I wouldn't bother spending extra for anhydrous ethanol, because it naturally absorbs moisture from the air and will self-dilute to 95% when not sealed.

The hilarious thing is it did nothing but harm Everclear's sales, as other brands are still free to sell at 95%. Edit: Oh wait no it was just discussed, it didn't pass. Great! btw ethyl acetate might work fine too, it also evaporates faster and GRAS, so you can use it as food grade extract. ethyl acetate is used to give fruity flavors and present in wines
Acetone is toxic to ingest. Acetone was made to use this, but it is not in the capsaicin. This is safe to eat (Aside from the extreme heat of course). Acetone has a very high vapor pressure, which means 99.99% of it will evaporate off if you just let it sit at room temp long enough. If you add it to anything while cooking, all of it would definitely evaporate very quickly. This is how a volatile solvent works. Its the same as boiling water on a stove, if you let it sit long enough, all the water will leave the pan. It doesn't get absorbed into the pan, it evaporates lol

I'm trying to get chili oil to make a mayonnaise. The seeds are 20 % fat so I just used a crap ton of seeds and ate the flesh of the pepper in a taco. I'm currently soaking the seeds in 95% ethanol. I heard you need 99% + ethanol to extract capsaicin properly, but I'm mainly just trying to get oil so I think it should work fine. I like that you used a plastic funnel with acetone, acetone breaks down plastics so you ended up with a bunch of plastic in your extract. Acetone also has a lower LEL (2%) than ethanol (3%) so it's more dangerous to use.

Certainly not pure capsacin. The Syrup would be sugars. The dark red would be Beta-Caretene. One method to remove the sugars & many other impurities would be to wash the syrup with very cold water (refrigerated @ 4-8 degrees will do) Capsacin is virtually insoluble in the cold water whilst the sugars and other impurities would dissolve. Mixture would be shaken well, placed in the fridge or freezer until just over freezing point - then filter (probably keeping the entire filter process in the fridge) The Beta Carotene & other flavenoids would not be separated, but whatever remains on the filter paper can then be washed with 100% Ethanol and then left to evaporate. I used ethanol, so it can still be edible. (acetone certainly not a bright idea, but harder to get 100% "food grade" ethanol.) In this case - you may get crystals of pure capscain or at least make a powder/dry mixture (or crystals stained red)- not a sticky sugary messy syrup. (it is still red due to flavenoids/beta-carotene not being separated) However, I have tried this and consider it somewhat pointless (but fun chemistry) due to the loss of other complex flavors i.e - chilli's are best used FRESH !!! Doing this extraction just makes it extremely hot but not taste like food, more like a chemical burn. (I just used a pin head on my tongue - and its just a sharp pain, no not the pin head pricking my tongue - but hardly tell the difference if it was) I dont know how to separate the flavenoids/beta-carotene - any ideas ? One method would be via chromotography ? - but the hassle is far too great & quantities unreliable on a large scale. (although for those with an interest in chemisty, chromotography would be an interesting tool - you would get red, yellows and orange bands as various parts separate - however, another method is required to separate and grow PURE capsacin crystals ??? How ???.
I'd like to see this revisited with a soxelate extractor and ethanol. Also jolokia peppers are hotter, but not as accessable. Would be nkce to see if theres a way to remlve the beta-carritines.
the highest level of capsaicin is in cayenne powder 8x more than any chillies , chillies 500 - 1500 on.the scoville scale compared to cayenne's 30.000 - 50.000
I did this about a decade ago, but used isopropanol. I did some research on how much isopropanol you'd have to consume to start experiencing health issues, and it was a considerable amount, far more than the amount of capsaicin oil a normal person could consume. Since a few microliters is enough to feel the heat, I didn't think it would be worth it to spend the extra money on Everclear, and it's probably safer than using denatured ethanol. I did boil away the alcohol, and since alcohol fumes are rather flammable, it had to be a slow boil so the fumes didn't make their way to the flame.
@@eminusipi I don't know what country _that_ would be in, but certainly not here. The idea is to make it unpalatable: you take a swig, you puke it right up... if you can swallow it at all. People used to ethanol can swallow methyl alcohol without hardly even noticing. That's why so many are blinded, and even killed, by bootleg alcohol cut with cheap methanol. Governments aren't going to be party to culpable _homicide_ .

Might be worth determining the actual concentration left, I'm thinking haloform (can be done with household bleach) and then weighing the produced sodium acetate, perhaps supplemented with a titration, if you're sufficiently sure there's no other bases.
Javzael arson there's a difference between arguing that the dose is too low to matter and arguing that the stuff isn't really all that toxic anyway, but it is effectivelt the same of course. Thinking about it, how might various "non-toxic" volatile solvents stack up? Water would of course be number one if considered sufficiently volatile. Ethanol would surely come second, or would ethyl acetate? Is n-propanol more toxic than ethanol somehow? Is isopropanol more toxic than the acetone it is metabolized into? Maybe I should ask a toxicologist while I am rattling off questions you might not be interested in and I am not sure I really want answered.
actually if its from un-concentrated capsaicin its ok to get on your skin but not eyes, its very therapeutic to me the burn. Plus when i eat ghost pepper it really feels good to the throat and look at the bright side, it clears your sinuses and if you have stuffy nose after eating super hots your nose would be watery but clear.
I don’t know what the white residue in the filtration flask is but if you collect a sample and run it through a GC/MS you should be able to identify it.
I mean, technically you probably could. I think burning it though would destroy some of the capsaicinoids and also, you would need a way to put it out before you get too little solvent, otherwise you might burn your product. In general, I really don't suggest burning solvents to get rid of them. It is not only not very efficient, but dangerous to have a large volume of ignited solvent.
I can't help but wonder if any neighbors questioned the burning fumes coming from your home. A friend once dried chili peppers for sauce and I had to get out of the house. I could still pick up the smell away from the home so I'd figure a project like this would create a more concentrated effect.
It should be noted *use pure acetone, do an evaporation test on a glass plate and make sure no additives are in the acetone* Additives will be left behind on the plate, any white or other residue means it is not safe to consume, or use for pepper spray.
You should do a video on doing extractions on Kratom. I've read that an acid (vinegar) and ethanol extraction yield different results. I tried once, and it seemed to be ok, but I didn't use a high enough proof of ethanol (just 80 proof vodka) and I rushed my vinegar evap.
If using nearly ethanol instead, I guess it is necessary to boil it off (~80°C). The final solution will be "diluted" in the small amount of water in the ethanol solution I think and might precipitate.

where im from only 75% ethanol is legal so there would be tons of water which would be hard to evaporate

Years back during my misspent youth I used to do something similar with grass and ether, end product is a clear butter that I'd absorb into a pocket of rolling tobacco that when burned smelled nothing like the raw ingredient. The effect is much mellower but the fact that I could openly smoke it in the foyer before seeing a movie made up for its lack of potency.

We make tincture for tolerance building. Food grade alcohol is used, and the peppers used are rarely below ghost level heat. We also agitate for 3-6 months before filtering and evaporating by 50% before bottling
i found that if you want an extract this was a good procedure, if u want a crystal it is not. i was going to repeat with a water extraction as the red pigment should come out primarily in h20 but not the capsaicin , then repeat this procedure on water washed powder and it should be easyier to crystallise. worth a try

I would use Ethanol in stead of acetone. That has the Advantage, that you can use it maybe for cooking. But do not use spiritus you would taste it. Maybe you get a rum with 80% or something.

+Drew Goslin Everclear is only 70% alcohol. You'd have better results if you found something that was 95%, like Graves. I wouldn't bother spending extra for anhydrous ethanol, because it naturally absorbs moisture from the air and will self-dilute to 95% when not sealed.

+Drew Goslin Huh, you're right. I just checked and Wisconsin banned 95% Everclear a few years back. The hilarious thing is it did nothing but harm Everclear's sales, as other brands are still free to sell at 95%.

Great! btw ethyl acetate might work fine too, it also evaporates faster and GRAS, so you can use it as food grade extract. ethyl acetate is used to give fruity flavors and present in wines

Acetone is toxic to ingest. Acetone was made to use this, but it is not in the capsaicin. This is safe to eat (Aside from the extreme heat of course). Acetone has a very high vapor pressure, which means 99.99% of it will evaporate off if you just let it sit at room temp long enough. If you add it to anything while cooking, all of it would definitely evaporate very quickly. This is how a volatile solvent works. Its the same as boiling water on a stove, if you let it sit long enough, all the water will leave the pan. It doesn't get absorbed into the pan, it evaporates lol

Just a heads up, the faster you dry your peppers, the more heat the lose. Even in a dehydrator. In general, it is best to let them air dry.

If you are using this for food, wouldn't high proof alcohol be better, than Acetone? I see other cooks using Everclear but I don't know what I am doing... so I am asking questions.
I'm trying to get chili oil to make a mayonnaise. The seeds are 20 % fat so I just used a crap ton of seeds and ate the flesh of the pepper in a taco. I'm currently soaking the seeds in 95% ethanol. I heard you need 99% + ethanol to extract capsaicin properly, but I'm mainly just trying to get oil so I think it should work fine.
I like that you used a plastic funnel with acetone, acetone breaks down plastics so you ended up with a bunch of plastic in your extract. Acetone also has a lower LEL (2%) than ethanol (3%) so it's more dangerous to use.

The way this video ended made me think my phone died.
Certainly not pure capsacin. The Syrup would be sugars. The dark red would be Beta-Caretene. One method to remove the sugars & many other impurities would be to wash the syrup with very cold water (refrigerated @ 4-8 degrees will do) Capsacin is virtually insoluble in the cold water whilst the sugars and other impurities would dissolve.
Mixture would be shaken well, placed in the fridge or freezer until just over freezing point - then filter (probably keeping the entire filter process in the fridge) The Beta Carotene & other flavenoids would not be separated, but whatever remains on the filter paper can then be washed with 100% Ethanol and then left to evaporate. I used ethanol, so it can still be edible. (acetone certainly not a bright idea, but harder to get 100% "food grade" ethanol.)
In this case - you may get crystals of pure capscain or at least make a powder/dry mixture (or crystals stained red)- not a sticky sugary messy syrup. (it is still red due to flavenoids/beta-carotene not being separated)
However, I have tried this and consider it somewhat pointless (but fun chemistry) due to the loss of other complex flavors i.e - chilli's are best used FRESH !!!
Doing this extraction just makes it extremely hot but not taste like food, more like a chemical burn. (I just used a pin head on my tongue - and its just a sharp pain, no not the pin head pricking my tongue - but hardly tell the difference if it was)
I dont know how to separate the flavenoids/beta-carotene - any ideas ? One method would be via chromotography ? - but the hassle is far too great & quantities unreliable on a large scale. (although for those with an interest in chemisty, chromotography would be an interesting tool - you would get red, yellows and orange bands as various parts separate - however, another method is required to separate and grow PURE capsacin crystals ??? How ???.

Yes it should, but your final product might contain a little bit of water, but 96% ethanol should evaporate azeotropically.

Why did you choosed acetone instead of methanol for polar solvent or gasoline for organic solvent ?
the highest level of capsaicin is in cayenne powder 8x more than any chillies , chillies 500 - 1500 on.the scoville scale compared to cayenne's 30.000 - 50.000
I did this about a decade ago, but used isopropanol. I did some research on how much isopropanol you'd have to consume to start experiencing health issues, and it was a considerable amount, far more than the amount of capsaicin oil a normal person could consume. Since a few microliters is enough to feel the heat, I didn't think it would be worth it to spend the extra money on Everclear, and it's probably safer than using denatured ethanol. I did boil away the alcohol, and since alcohol fumes are rather flammable, it had to be a slow boil so the fumes didn't make their way to the flame.
But can you use it in food if extracted with acetone? Could you do this with ethanol instead to make it food safe?

Denatured alcohol has methanol added to it to make it toxic to avoid a liquor tax. For a repellent it should be fine.

I don't know what country _that_ would be in, but certainly not here. The idea is to make it unpalatable: you take a swig, you puke it right up... if you can swallow it at all. People used to ethanol can swallow methyl alcohol without hardly even noticing. That's why so many are blinded, and even killed, by bootleg alcohol cut with cheap methanol. Governments aren't going to be party to culpable _homicide_ .

And acetone isn't all that toxic anyway. It's GRAS up to 5-8 mg/l, depending on what it's in. Might be worth determining the actual concentration left, I'm thinking haloform (can be done with household bleach) and then weighing the produced sodium acetate, perhaps supplemented with a titration, if you're sufficiently sure there's no other bases.

Thinking about it, how might various "non-toxic" volatile solvents stack up? Water would of course be number one if considered sufficiently volatile. Ethanol would surely come second, or would ethyl acetate? Is n-propanol more toxic than ethanol somehow? Is isopropanol more toxic than the acetone it is metabolized into? Maybe I should ask a toxicologist while I am rattling off questions you might not be interested in and I am not sure I really want answered.

actually if its from un-concentrated capsaicin its ok to get on your skin but not eyes, its very therapeutic to me the burn. Plus when i eat ghost pepper it really feels good to the throat and look at the bright side, it clears your sinuses and if you have stuffy nose after eating super hots your nose would be watery but clear.

I mean, technically you probably could. I think burning it though would destroy some of the capsaicinoids and also, you would need a way to put it out before you get too little solvent, otherwise you might burn your product.
In general, I really don't suggest burning solvents to get rid of them. It is not only not very efficient, but dangerous to have a large volume of ignited solvent.

I can't help but wonder if any neighbors questioned the burning fumes coming from your home. A friend once dried chili peppers for sauce and I had to get out of the house. I could still pick up the smell away from the home so I'd figure a project like this would create a more concentrated effect.

It should be noted *use pure acetone, do an evaporation test on a glass plate and make sure no additives are in the acetone*
Additives will be left behind on the plate, any white or other residue means it is not safe to consume, or use for pepper spray.

You should do a video on doing extractions on Kratom. I've read that an acid (vinegar) and ethanol extraction yield different results.
I tried once, and it seemed to be ok, but I didn't use a high enough proof of ethanol (just 80 proof vodka) and I rushed my vinegar evap.

If using nearly ethanol instead, I guess it is necessary to boil it off (~80°C). The final solution will be "diluted" in the small amount of water in the ethanol solution I think and might precipitate.
