The people in a state of trance are called 乩童(ji1 tong2) 。They are supposedly chosen by spiritual beings to reveal their divine expressions to their believers. When a jitong is in a state of trance, or acting drunk in the case of one jitong you saw, they are possessed by some spirits and act on their behalf in the human realm. Another term for jitong more familiar to English speakers is shaman. Shamanism is a form of religious practice found in many cultures around the world. And you are correct to say that this practice is still thriving in Taiwan as living history.

The 麵 in 麵茶 means flour (麵粉）not noodle. Noodle in Chinese is actually 麵條。
